Aloo methi sabji without tomato, a super easy recipe with spices powders to balance the taste.

This is just a simple sabji with methi leaves stir fried along cooked aloo. I like to use my sambar powder (which is majorly dhaniya and chilli) for my sabjis as it's very handy.
Instructions
- Clean the methi leaves and chop them coarsely, keep aside.
- Peel the potatoes, cube them and Parboil them.
- Heat kadai and add the tempering items in hot oil, followed by onion.
- Fry till onion turns golden brown and add the methi leaves and fry till it reduces in volume.
- Now add chilli & coriander powder (I used my sambar powder in place of these), turmeric, salt and potato pieces.
- Sprinkle water and mix well and cook covered in low flame.
- Fry till potato turns golden brown and nice aroma comes.
- Transfer to serving dish and serve as an accompaniment for rice or for rotis!

Ingredients
- 3 Potato
- 1 Onion
- 1 cup Methi leaves without stem, tightly packed
- 1 teaspoon Kashmiri chilli powder
- Β½ teaspoon Coriander powder
- ΒΌ teaspoon Turmeric powder
- Salt
To Temper:
- Β½ teaspoon Mustard Rai
- 1 teaspoon Cumin seeds Jeera
- 1 tablespoon Oil
Instructions

Tried your aloo methi today and came out good...But when the potato in my gravy was not as roasted as yours..When the curry started sticking to my pan I drizzled some water and stirred it...I switched off the stove when the gravy used up all water...Should I have used oil during that time???

Cook covered for some time(say 5 minutes)in medium flame and after that keep stirring at interval of 2 minutes for 6-8 minutes. Do not keep sprinkling water. Only once when you cover and cook. After that, if u want you can drizzle oil to avoid sticking to pan... hope this helps

Skip red chilli powder, turmeric and you can add green chillies and cooking cream to make it as gravy
