    Avocado cucumber sandwich recipe

    Avocado cucumber sandwich, I have spread green chutney to suit my Indian taste buds. A simple and healthy one to start your day.

    You can swap green chutney with pesto or mayonnaise too.

    Perfect for breakfast or mid morning snack these sandwiches are to go choice to use up avocado.

    For making milkshake, I bought 2 avocados but tried milkshake with only one, so had this in stock.

    And thought of having sandwich with avocado and tried this simple sandwich.

    This is so flexible, add onions, tomatoes, skip green chutney, use mayonnaise, its all upto your imagination.

    I had this green chutney with me so made it with green chutney.

    Easy avocado cucumber sandwich

    1. Cut the avocado but running the knife along until you reach the seed. Gently hold the two parts and twist to open it.

    2. Gently strike and insert the knife inside the seed. Twist and lift it to discard it.

    3. Scoop and slice the avocado.

    4. Spread green chutney in one slice, cheese spread in other.

    5. Arrange a layer of avocado slices and then cucumber over it. Sprinkle crushed black pepper.Cover it other slice and cut into triangles to serve

    Perfect as breakfast along with some fruit juice. I used multigrain bread slice with flax seeds. You can use bread of your choice.

    Avocado sandwich recipe

    Avocado sandwich with cucumber, I have spread green chutney to suit my Indian taste buds. A simple and healthy one to start your day.

    Ingredients

    • 1 Avocado ripe
    • 1 Cucumber
    • 1 tablespoon Green chutney
    • 1 tablespoon Cheese spread or 2 cheese slices
    • ½ teaspoon Black pepper crushed
    • 4 Bread slices

    Instructions

    • Cut the avocado by running the knife along until you reach the seed. Gently hold the two parts and twist to open it.
    • Gently strike and insert the knife inside the seed. Gently twist and lift, discard it.
    • Scoop and slice the avocado.
    • Spread green chutney in one slice, cheese spread in other.
    • Arrange a layer of avocado slices and then cucumber over it. Sprinkle crushed black pepper.
    • Cover it other slice and cut into triangles to serve.

    Notes

    • I like something sweet in my sandwich, so I drizzle honey ½ tsp.
    • Avocados must be sliced and used fresh.
    • If you want to skip green chutney, use little lemon juice.
    • You can use a cheese slice in place of cheese spread. Or mayonnaise, sour cream also can be used.

      Hi can you pl tell us how to select avocadoes and how to know when the right time is to use them? As I have a lot of difficulty in both these times

      Press very gently to see if its firm or slightly soft. If it is firm, buy and keep at room temperature until it,s slightly soft when you press.'If it's already like that, you can keep in fridge to slow the ripening or use it right away. Hope this helps.
