Baby corn masala recipe, baby corn recipes

Baby corn masala is a delicious side dish for roti or any Indian flatbread. You can adapt this recipe to add paneer, capsicum etc.

This is an updated version of my old post baby corn korma. I have changed the recipe and updated as I make it this way now a days. I will later sure post a proper korma version if get it right. Mean while, this is the basic masala I follow for most of the gravies. I loved this way after having it few times in Raj restaurant in Singapore. Though I will make same way as that and hooked to it now.

Usually Aj orders this with their Biryani. We would have gone there 4-5 times, so each time he orders the same. I add paneer or capsicum along baby corn as we love it that way. Please go through the notes section for more tips on baby corn masala recipe.

Masala powder:

I at times add my sambar powder instead of red chilli powder and coriander powder. Though it is called sambar powder, it is more like a curry powder if I want to make understand easily. My sambar powder do not have kopra or asafoetida in it. It’s plain red chilli and coriander seeds in major ratio. Some traces of cumin, methi seeds and turmeric will also be there, which is perfect in such gravies too.

Cream/ Milk:

I use milk instead of water to make the gravy rich. If you have cream, you can also add it towards end. Just the quantity varies. Just make sure to add little by little as you stir, do not add as such fully to in one go. This prevents curdling.

Curdling of gravy:

To prevent curdling, add slowly and mix as you add. Use binding agents like cashews in the gravy.

Baby corn masala

Baby corn masala is a delicious side dish for roti or any Indian flatbread. You can adapt this recipe to add paneer, capsicum etc.

Cup measurements

Ingredients

  • 12 Baby corn
  • 1 Onions
  • 2 Tomato
  • 1/2 inch Ginger piece
  • 2 cloves Garlic
  • 2 Green chillies
  • 1 tbsp Cashew paste
  • ½ tsp Garam masala powder
  • 1 tsp Red chilli powder
  • 1/2 tsp coriander powder
  • ¼ tsp Turmeric powder
  • 2 tbsp Oil + ghee
  • 1 tbsp Kasoori methi
  • Coriander leaves – for garnishing

To temper

  • 1 Biryani leaf
  • 1 Cardamom
  • inch Cinnamon
  • 2 cloves

Instructions

  • Cut baby corn to your desired shape and pressure cook for 3 whistles and keep aside.
  • Fry the cubed onions, ginger, garlic in a tsp of ghee/oil and grind it along with tomatoes.
  • Heat the kadai with oil, ghee and add the tempering items followed by the above ground paste.
  • Add turmeric, garam masala powder, red chilli powder, kasoori methi and salt, mix well.
  • Fry it in medium flame for 5-8 minutes or till the oil leaves the sides of the kadai. (can stir it occasionally, but take care not to burn.)
  • Meanwhile grind cashew to a smooth paste and add it and fry till oil separates(2 mins).Add the cooked baby corn.
  • Add water/ milk, little by little  to make it to a gravy and heat in medium low flame. No high flame as there are chances of curdling of milk.
  • Garnish with chopped coriander leaves.

Notes

  • I grind some extra cashews to make it a paste and store for the weeks use in fridge or keep in freezer if not using immediately.
  • If grinding just 5 cashews for the recipe, use water enough to grind the cashews smooth. Or you can also saute along the onion and grind along together.
  • Make it baby corn paneer masala : Immerse paneer cubes in hot water and just the moment you are going to add, drain the water and add it to the masala. Add paneer just 1 minute before you put off the stove. Do not boil after u add paneer for more time, just heat it for a minute.

Baby corn masala method:

  6. Meanwhile grind cashew to a smooth paste and add it and fry till oil separates(2 mins).

  7. Add the cooked baby corn.

  8. Add water/ milk, little by little  to make it to a gravy and heat in medium low flame. No high flame as there are chances of curdling of milk.

  9. Garnish with chopped coriander leaves.

You can also add panner cubes in this just like in Kribha’s baby corn paneer curry…

paneer variation

  1. If you are adding paneer, immerse paneer cubes in hot water and just the moment you are going to add, drain the water and add it to the masala.
  2. Add paneer just 1 minute before you put off the stove. Do not boil after u add paneer for more time, just heat it for a minute.

You can also add crisp fried capsicum, onion and tomato at the end and garnish to get a restaurant taste and look. I tried so and took a picture the other day, so here’s an update…Enjoyed with roti…

    looks lovely raks. but why do u need to soak cashews in water for 3 hrs? just curious to know as i usually grind them to paste with other ingredients. does soaking in water for 3 hrs make any difference to the one which is not soaked?

    I too used to grind cashews as such..but one of my friend Sangeetas kitchen said it will grind easily and smoothly if we soak and grind..and she told thats the way she does..After that I too followed that idea..!!But theres no harm in grinding without soaking too!!
