Baby corn sabzi with tomato, capsicum, onion. Simple and easy recipe to go well with dal chawal or other lunch menu. Stepwise photos.

My kid has few favorite veggies, in that baby corn is one. So weekly once this will be in the menu for him. He loves baby corn sabzi with steamed basmati rice and simple yellow dal for his lunch. His concept of liking a vegetable is really simple. The vegetable should be crunchy, retain it’s texture. Not soft after cooking. So he loves baby corn. Here is the recipe for baby corn sabzi.

Baby corn Sabji preparation summary:

First boil the baby corn. Stir fry and cook with onion, tomato and capsicum with spice powders.

Make sure to choose fresh, crisp and tender ones to make sure it turns out the best. You can do variations by adding ginger garlic paste and garam masala powder, cumin powder and make it more masaledar sabji.

Baby corn sabzi

Baby corn sabzi with tomato, capsicum, onion. Simple and easy recipe to go well with dal chawal or other lunch menu. Stepwise photos.

Cup measurements

Ingredients

  • 12 Baby corn
  • 1 Onion chopped
  • 2 Tomato chopped
  • 1/2 Capsicum cubed
  • 2 Green chilli slit
  • 3/4 tsp Red chilli powder
  • 1/2 tsp Coriander powder
  • 1/8 tsp Turmeric
  • 2 tbsp Coriander leaves
  • Salt & water – As needed

To temper

  • 1 tbsp Oil
  • 1 tsp Cumin seeds

Instructions

  • Cut the baby corn to your desired shape and boil it with salt and turmeric until done.
  • Heat a pan with oil and temper with the jeera. Add onion and green chillies and fry till transparent.
  • Add the cooked baby corn and red chilli powder and cook for 2-3 minutes.
  • Add the tomato and capsicum and fry for 2-3  more minutes in medium flame.
  • Top with coriander leaves and drizzle with some oil to give it a glaze. Switch off the flame.

Notes

  • You can add finely chopped ginger or ginger garlic paste along with onion if you like.
  • You can also pressure cook baby corn instead boiling. 1 whistle in small pressure cooker, with little water and salt.

Baby corn sabji method:

  1. Cut the baby corn to your desired shape and boil it with salt and turmeric until done.

  2. Heat a pan with oil and temper with the jeera. Add onion and green chillies and fry till transparent.

  3. Add the cooked baby corn and red chilli powder, coriander powder and cook for 2-3 minutes.

  4. Tip in tomato and capsicum and fry for 2-3  more minutes in medium flame.
    step4 stir fry
  5. Top with coriander leaves and drizzle with some oil to give a glaze. Switch off flame.

Notes

  • You can add finely chopped ginger along with onion if you like.
  • You can also pressure cook baby corn instead boiling.

Fry for a minute and transfer to the serving bowl. Serve as accompaniment for rice or roti .

    I tried the receipe today and came out really tasty. My husband appreciated it a lot. I also added a bit of jeera and black pepper powder to this for a spicier version. Easy to cook. Tasty and healthy since not much of oil or spices used.
