This idea was passed to me by my reader Harini Kumarasamy. She sent me this 2 months back and been thinking to try.

Last month when I had both beetroot and idli dosa batter, I tried this one and turned out good.

This is just a basic idea, you can improvise this with your favorite ingredients in it.

    Variations

    • Swap cumin with 1 tablespoon of chopped ginger.
    • Do a mustard, urad dal, asafoetida, curry leaves tadka.
    • Grind a shallot along, do not add more than one as it might tend to become sticky.

    Top tip

    • Do not add more beetroot as it will stick to pan if you overdo.
    • If in case the dosa sticks, add more batter or rice flour to fix it.
    • For making thin dosa, recommend adding less beetroot than mentioned (reduce to half) for easily taking out from pan.

    Step by step

    1. Grind red chilli, jeera and cubed beetroot without adding water to a smooth paste.
    1-grind
    1. Add it to the batter, along with asafoetida and mix well.
    2-mix
    1. In a hot tawa, spread the dosa on desired thickness. I made it thick and cooked with a lid covered. drizzle some oil. Flip and cook until done.
    3-ready

Recommend coconut chutney the best combination to go with this. I had with onion tomato chutney, was not bad. Coconut chutney would give a treat to eye too along with this red velvet colour😃.

      Hi Raks,
First of all thanks for awesome recipes!
I just add grated beetroot, finely chopped onion and cilantro to the idli/dosa batter and make dosas. Its my family favorite!Instead of cilantro you can add chopped curry leaves or mint. All these herbs gives nice flavor and taste. It tastes good with bit old batter as Veena said - 3 days old. - Radhika

Yes, could be. You can add a handful of rava to fix it. Also if beetroot puree is more, it sticks.
