Biscoff latte, speculoos latte, biscoff coffee

Biscoff latte or speculoos latte recipe, a delicious drink with holiday cookies for the festive season.

Last month, saw this Speculoos drink in coffee bean Singapore. Then only I learnt about the speculoos. I wanted to taste the drink once and try at home. But could not. When I looked for the recipe, found handful of recipes, most of them from few brands. Adapted one from here as it is from scratch. Did not follow to the T but made it still turned out tasty.

What is Speculoos?

Speculoos is crispy holiday cookies made especially during the month of December. To understand easily, if you know biscoff biscuits, it is perfect example. Though the traditional ones have some image too in it’s surface. It has a flavour from many spices, but cinnamon, clove, ginger and nutmeg are very evident.

Recently was happy to see how it is made in my blogger friend’s Insta feed. So, don’t think it is something new, its just a coffee with cookie. Bring a cafe inspired drink to your kitchen and surprise yourself.

If you do not have espresso/ decoction, you can use 2 tsp of instant coffee too. Just dissolve in a tbsp of hot water. Check my filter coffee post for making fresh decoction.

Biscoff latte biscoff coffee

Biscoff latte or speculoos latte recipe, a delicious drink with holiday cookies for the festive season.

Equipments (Amazon Affiliate links)

  • whisk
Cup measurements

Ingredients

  • 1 cup milk
  • 1 tbsp espresso or thick decoction
  • 4 Biscoff/ speculoos
  • 3-4 tbsp brown sugar

To serve:

  • 1 Crushed cookie
  • whipped cream

Instructions

  • Powder biscoff cookies in a blender.
  • Take a sauce pan, add sugar and water. Bring to boil.
  • Add powdered biscoff. Use a whisk and mix well. Once thick, switch off flame. Add more sugar to loosen the mixture.
  • Add coffee (espresso/ thick decoction) and mix.
  • Boil milk and add 1/4 cup first as you mix with the whisk.
  • Once mixed, add rest of the milk and blend it.
  • Serve in heated cups and top it with whipped cream and some crushed cookies.

Notes

  • Do not boil together water, sugar and cookie powder together.
  • Skip step 1-4 and use cookie butter (Biscoff spread)
  • Reduce sugar quantity if you are not sweet toothed
  • Never heat everything together as the biscoff will make the milk like a porridge.
  • Serve with a dash of cinnamon on the top for intense flavour.

  1. Powder biscoff cookies in a blender.
