    Buckwheat waffles recipe, eggless gluten free waffles

    Buckwheat waffles, a gluten free waffle recipe. Quick video, step by step pictures, easily can be adapted as vegan.

    Buckwheat is commonly used in north India, as flour mostly (kuttu ka atta). Widely used during Navratri fasting days, many Falhari dishes are made using buckwheat.

    This is totally new to me in terms of using in my cooking. But have seen among other food bloggers. Having eaten many millet varieties, oats etc, I liked buckwheat and surprisingly Aj too liked.

    May be the fact that he tried it as waffles. But was so happy that he is liking something healthy.

    It motivates me to try different recipes using buckwheat. I made this twice already and thought of sharing the recipe.

    Egg free

    This recipe uses faux eggs with flax seeds (flax meal), which makes it more nutritious. All you need is a good waffle Iron.

    You can also check my basic eggless waffles if you do not have flax seeds.

    Mine is one that comes as an interchangeable plate with a sandwich maker. I wanted to buy a good waffle maker as I don't like the quality of this.

    Waiting for Circuit Breaker in Singapore to get over to invest on a good one. Though can be bought online too, kind of scared about purchasing appliances online.

    In terms of recipe, I adapted it from a vegan buckwheat waffle recipe, but made this version.

    So this can easily converted into vegan recipe if you swap butter with coconut oil and cow's milk with nut milk.

    I made with more cinnamon first time, but felt it was over powering for me. So reduced next time and it was so perfect!

    My notes

    • I have used vanilla extract, if you are using essence, use only half the quantity.
    • If you have a good quality waffle iron, you can increase the baking powder to ¾ teaspoon as it turns out so crispy out side that way.

    Perfect waffles

    • Use a good quality waffle iron for best result.
    • Heat the waffle iron before adding batter to it.
    • To avoid sticking, use cooking spray. I personally don't add butter, just use oil.
    • Always add batter to iron only after it is hot.
    • Do not open before it gets cooked. Otherwise, it sticks to top and bottom, and end up in split.
    • Make sure to cook thoroughly before opening. I waited for 2 cycles to double ensure it is cooked. So first read your manual before starting.
    • Other reason for sticking is too much of baking powder or liquid in the batter.
    • If it turns soggy, then your baking powder did not work with milk while it get cooked. Change the batch and use fresh ones.
    • If your baking powder is not good, it gives bitter taste as well as weird smell in waffles.

    Ingredients

    • ¾ cup Buckwheat flour
    • ½ cup + 2 tablespoon milk
    • 1 & ½ tbsp melt butter
    • ½ tablespoon country sugar
    • ½ teaspoon baking powder
    • ⅛ teaspoon cinnamon powder
    • ½ tablespoon flax meal
    • 1 & ½ tablespoon warm water
    • ½ teaspoon vanilla extract
    • Oil for greasing

    Instructions

    Prepare flax meal:

    • Place flax seeds in a mixer and powder it finely. You have flax meal now.

    Prepare faux eggs:

    • Take 1 & ½ teaspoon of flax meal and mix 1 & ½ tablespoon of warm water to it. Keep aside for 15 mins. This is faux egg with flax meal.

    Prepare batter:

    • First take dry ingredients and mix well with a whisk. Then add milk, butter, faux egg, vanilla and whisk well to smooth batter.

    Make waffles:

    • Heat a waffle iron and grease it with oil. Pour ¼ cup of batter.
    • Cook as per the cooking time given in your waffle manufacturer's manual and take it out.

      Hi mam,

      1. Can we make waffle in normal wheat flour?
      2. Instead of countrysugar can we add normal white sugar or honey?

        Yes you can. Just avoid honey in batter, you can use white sugar

      I have quadrupled the recipe (24 waffles). 2 teaspoons of baking powder for 3 cups of flour seems quite low, no? Wouldn't that leave the waffles a bit dense?

        It wasn't dense, it turned out light and soft. Probably because of the flax mixture and buckwheat's nature. Please do dry as such.
