    Capsicum vegetable pulao recipe

    Capsicum vegetable pulao comes together quickly and very easy one pot meal idea as well as colourful lunch box fix you can whip up under 30 minutes.

    This is a recipe I learnt from my MIL who saw this in a television cookery show. Check out my easy carrot rice and jeera cashew pulao recipes too in my website.

    Ingredients

    It is so flexible that capsicum as main ingredient, you can add any vegetable you have. It can be your favorite or even frozen vegetables.

    • Capsicum
    • Vegetables
    • Onion
    • Green chilli
    • Mint leaves
    • Coriander leaves
    • Ginger garlic paste
    • Spice powders
    • Whole spices

    Capsicum veg pulao method

    1. Wash and soak basmati rice in 2 cups water firstly.

    2. Heat a pressure cooker with oil. Following it, temper with cinnamon, clove and cardamom.

    Then add sliced onion & slit green chillies. Stir fry for 30 seconds.

    Next, in goes ginger garlic paste and cook for 1 minute.

    3. After that, add vegetables and capsicum.

    4. Cook furthermore for 2 minutes in medium or low flame.

    5. Then add turmeric, chilli powder, coriander powder, garam masala powder and little salt.

    6. Immediately give it a stir, for 30 seconds.

    7. Now add mint and coriander leaves and just saute until it shrinks.

    8. Then add soaked rice + water and required salt. Mix well and bring to boil.

    9. Finally, close the lid and give 2 whistles in medium flame. Once done fluff carefully once or twice.

    Serve capsicum vegetable pulao with onion raita and some potato chips by side.

    My notes

    • Soaking basmati rice lets it cook long and avoids dryness. Soak in hot water for 10 minutes or 30 minutes in plain water.
    • Do not over mix once the pulao is done. Just 2-3 gently fluff from bottom is enough. This ensures long grain.
    • Add more salt only while adding rice, if you add all salt to vegetables, then it will taste salty later.
    • If you taste the water after mixing salt, it should be slightly high like sea water, then only it will be balanced after rice is cooked.
    • You can skip the spice powders completely as pulao is meant to be mild. You can otherwise add ½ teaspoon garam masala powder alone too.

    Cup measurements

    Ingredients

    • 1 cup Basmati rice
    • 2 cups Water
    • 1 Onion sliced
    • 2 Green chillies slit
    • 1 teaspoon Ginger garlic paste
    • 1 cup Vegetables 4 beans, ½ carrot, ¼ cup peas
    • 1 cup Capsicum cubed
    • ¼ cup Mint + coriander leaves loosely filled
    • ½ teaspoon Red chilli powder I use sambar powder
    • ½ tsp Garam masala powder
    • ¼ teaspoon Turmeric
    • 2 tsp Coriander powder Optional
    • Salt

    To temper

    • 2 tablespoon Oil or ghee or mixed
    • 1 inch Cinnamon
    • 1 Cardamom
    • 1 Clove

    Instructions

      Just tried this for lunch today. Came to your blog from Sandhya's Kitchen 🙂
      Lovely flavour. I added just turmeric, chilli and coriander powders as did not have the sambar powder as per the recipe... and was too lazy to make it 😀

      But, the taste was wonderful... especially with curd!
