    Caramel bread pudding, Eggless bread Pudding recipe

    Caramel bread pudding with homemade caramel - 2 ways, with condensed milk in Instant pot as well as a simple one stove top version with just milk, bread, sugar.

    I remember I ate pudding for the first time in a wedding feast, when I was studying in my lower primary. Of course it was an Indianized version and mostly will be pineapple flavor with semolina those days.

    One of my uncles used to make fun by adding pudding to each and every thing we eat. But truly speaking I had no idea about it.

    Now through blogging world, I am now very happy to try this eggless caramel bread pudding recipe on my own and that too with my favourite caramel flavour!

    I love caramel flavour from my childhood. Among all the toffees from Nutrine my dad used to buy for us, Caramello used to be my favourite toffee.

    Other than that, till date I love 5 star like anything. It tastes out-of-the-world for me, may be the chewy texture is what I like along with its flavour. 

    Two ways

    And coming to these pudding recipes, I bookmarked first one from Tasty Treats earlier. At last I made this and loved it a lot. Simple ingredients and exotic pudding recipe .

    The second one is my recent favorite I saw in Instagram. I loved the idea of using condensed milk which makes it more rich and tasty. I did the steaming part in Instant pot.

    You can also use readymade caramel sauce or butterscotch for the base.

    Caramel bread pudding recipe

    Caramel bread pudding recipe with homemade caramel sauce and it is eggless version. Just steaming over stove top, no oven. Step by step pictures.

    Cup measurements

    Ingredients

    For Caramel

    • 3 tablespoon Sugar for caramel

    Method 1

    • 8 Bread slices
    • 1 & ½ cups Milk
    • ⅔ cup Sugar 11 tablespoon approx
    • 1 teaspoon Vanilla essence

    For method 2

    • 4 Bread slices white or milk bread works
    • 1 cup Milk warm
    • ½ cup Condensed milk
    • 1 teaspoon Corn flour Corn starch
    Prevent your screen from going dark

    Instructions

    • Prepare caramel
    • Heat a pan with sugar and 2 teaspoon water in medium heat.
    • When it starts to melt, tilt the pan frequently for even heating and take care not to burn the sugar.
    • At one stage the sugar is completely melted and starts turing golden yellow. Take off the heat.
    • Take a flat bottomed vessel. (6 inch bowl or any other similar).
    • Pour the caramel immediately in the vessel and tilt to coat the bottom and a bit in the sides as well. Let it cool down & set.

    Method 1

    • Trim the sides of the bread firstly.
    • Tear the bread into pieces and add milk to it. Mash it well with potato masher. Mix vanilla and sugar and keep aside.
    • Pour the bread mixture to it.
    • Steam cook it by covering the vessel with aluminium foil with holes pricked for the steam to escape.
    • Steam briskly for 20-25 minutes.
    • I used my pressure cooker. Fill it with 1 cup water, place the vessel with bread mixture inside. Use a trivet for stabilizing it.
    • Close the pressure cooker with lid, no need to put the pressure regulator / weight valve/ whistle.)
    • Once done, cool down completely.
    • Keep it in refrigerator for 2 hours minimum and then invert it  to a plate. You can cut it to desired shape before serving.
    • keep ready the vessel(flat 6 inch bowl or any other similar) and heat a pan with sugar and 2 teaspoon water. Tilt the pan frequently for even heating and take care not to burn the sugar. At one stage the sugar starts turning deep golden yellow.
    • Pour the caramel in the vessel and tilt to coat the bottom and a bit in the sides as well. Let it set for two minutes and pour the bread mixture to it.
    • Steam cook it by covering the vessel with aluminium foil with holes pricked for the steam to escape. Steam for 20-25 minutes. (I used my pressure cooker. Fill it with ¾ cup water, place the vessel with bread mixture inside covering the vessel with aluminium foil . Close the pressure cooker with lid, no need to put the pressure regulator / weight valve/ whistle.)
    • After that,cool down and keep it in refrigerator for 2 hours minimum and then invert it  to a plate. You can cut it to desired shape before serving.

    Eggless caramel bread pudding (Instant pot)

    • Pour caramel in a bowl in which you are going to make pudding.
    • Swirl the bowl to ensure the caramel covers the bottom. I chose a glass bowl, you can choose a baking tin (round or square). Set aside.
    • Trim the edges of the bread slices and powder the slices in a food processor.
    • In a mixing bowl, whisk together milk (room temperature or warm), corn starch, condensed milk and vanilla.
    • After that, mix it with bread crumbs to form a batter.
    • Transfer this mixture to the bowl in which we have set caramel.
    • Cover it with aluminium foil .
    • Start the Instant pot in Steam mode, High pressure, More - 30 minutes.
    • Add 2 cups of water to the pot and insert a trivet.
    • Then place the pudding mixture over the trivet.
    • Close lid with steam vent in a sealed position.
    • Wait until the timer is up. Give 15 mins standing time and release the rest of the steam if any.
    • Take out the pudding carefully and check for doneness. The surface will be slightly raised and a toothpick inserted should come clean.
    • Cool down completely and refrigerate for a minimum 1 hour.
    • To serve, loosen the sides running a knife along the edges.
    • Invert over a plate and cut into desired shape.

    Notes

    • Be sure you don't overheat the sugar syrup after it turns golden in colour, otherwise it may taste bitter. Also take care not to burn it in the sides of the pan,tilt it frequently to avoid this.
    • Don’t add more milk or sugar than mentioned. The pudding by itself is gooey and sticky, so adding more of any one of the above may not set properly.
    • Give at least a day for setting in the first method, before serving/eating to enjoy the fullest flavour!
    • I used my pressure cooker for steaming, without the pressure regulator (valve/weight) for the first method.

    Method

    Enjoy it cold as such or you can drizzle some caramel / butterscotch syrup as I did. I used Hershey’s store bought syrup . You can also serve it with Vanilla ice cream along with it.

      Annapoorani, we are making caramel in this recipe with sugar(step 2) and I think aluminium foil helps it steaming properly and quickly,also if we don't cover,there may some water on the top.

      I think you can try baking this as well.But I am sorry,I have no idea about the temperature. You can refer other pudding recipes for the temperature and timing.

      tempting clicks raji... love it... i tried making caramel custard long back but ended up in a recipe that tasted so bitter... i went wrong on the caramelizing part & never tried any caramel recipes then... now that i understood the process of caramelization i am definitely going to try this pudding... you always explain so clearly on the minute details of cooking which will have a great impact on the taste of the recipe... hats off to u...

      The timing of this recipe in my mail is perfect. My friend asked me to make bread pudding and made excuses as I've never had it before and thought it might be too much work. But this seems simple and I guess I'll get the ingredients easily too.

      Hi Smita, yes you can just melt by keeping the pan in boiling water and use the melt syrup again. Donot melt again in direct flame.

      Just keep boiling sugar with little water with constant stirring,it will sure start turning golden. Even when it forms crystals, if you continue heating, I think it can melt and make caramel...

      at what time we have to remove foil.after steaming remove foil or before put in freeze.i make this pudding my pudding was so soft i think their is some water in this puuding
