Carrot chutney recipe | Carrot chutney for idli dosa

Carrot chutney
Carrot chutney is a healthy and nutritious side dish for idli or dosa. Best way to make your kid eat vegetable in hidden form. Lovely colored chutney!
Carrot chutney not only looks appealing to our eyes, it has carrot hidden in it and makes it more healthy to consume too. Carrot can be a lovely replacement for coconut. This tastes similar to coconut thogaiyal, added with goodness of carrot!

Carrot chutney was what one day flashed my mind!!, but never tried as I thought it might give a sweet taste to the dish, Mr.R doesn't like anything which has a sweet flavour in his spicy dish!!, does it taste sweet, your chutney looks so gorgeous, it is calling me to try out, will give it a go with just one little carrot and how it is taken by my family !!

Temper in south indian cooking means : Heat oil in a pan/ Kadai until it hot. If you drop the mustard seeds, it should pop immediately. Pop the mustard seeds until the last one. Otherwise it will be bitter. So make sure the oil to be hot as you drop the mustard seeds, it should pop (crackle) immediately. Then add the other items one by one and fry until golden. This will be happening soon, so keep everything ready to avoid burning. In North Indian cooking, just heat oil/ghee and add the whole spices and give it a fry.
