Corn pulao recipe | Sweet corn pulao

    corn pulao

Corn pulao or sweet corn pulao is a simple one pot meal, packed with flavours. Step by step pictures post.

I had corn pulao only 2-3 times before. In buffet and once in flight. I loved it both the times. It was very simple to look at,  yet had wonderful taste. Even Aj loved it when he have it with some dal in the flight and with aloo palak in the buffet once. So I had a thought of trying it since last year when I travelled to India. Now after almost an year, just trying!🤦‍♀️

It came out very well and corn is always my boy's favourite. So he enjoyed it. You can make this corn pulav for even your lunch box and pair it with something like dal makani, rajma masala or even palak paneer or aloo palak ~ it makes a hearty meal! Use good quality basmati rice and you have amazing fragrant pulao.

    Cup measurements

    Ingredients

    • Basmati rice - 2 cups
    • Sweet Corn - 1 cup Frozen
    • Green chilli - 2
    • Milk - ½ cup optional (use water otherwise)
    • Water - 2 cups

    • Ginger - 1 inch piece
    • Pepper - 1 tsp (black, whole)
    • Cinnamon - 1 inch piece
    • Cloves - 2
    • Cashew - 7

    To temper

    • Oil + ghee - 3 tbsp
    • Biryani leave - 1
    • Cardamom - 2

    Instructions

    • I used frozen corn, if you are using the fresh sweet corn, first separate the kernels. Wash and keep aside.
    • Soak the rice for at least 10 mins.
    • Grind the items under 'To grind' table with little water to a smooth paste.
    • Heat a pressure cooker with oil + ghee and temper with biryani leaves and cardamom followed by slit chillies.
    • Add the ground paste and fry for 2 minutes in medium flame and let the raw smell go away.
    • In goes the corn and fry for another 2 minutes in medium flame.
    • Add little salt for the corn. Add the milk and water, bring to boil.
    • Add salt, mint leaves, coriander leaves and rice.
    • When it starts boiling again, mix well. Cook in high for 2 mins or until the rice is cooked ½ way.
    • Check for salt and reduce the flame to lowest possible and cook for 12-14 minutes.

    Notes

    • You can add onions in the recipe, I wanted to make it simple so didnt add.
    • Milk gives a sweet richness, but you can replace it with coconut milk or water too.
    • If you cant reduce the flame to low in your stove, you can give two whistles in medium flame. Total liquid 3 cups for this recipe. .
    • If the flame is higher, then you may need more water. So experiment with your water ratio.

      Hi I loved it.
I would like to make a small correction in your step wise presentation. You have written it as to grind the ingredients under "to temper" but I think you have actually grinded the other ingredients.
      Kindly correct it

      Hi Rak's,
I am regular visitor of your blog. But yes, this is the first time I'm posting a comment. I love to read different recipes from here. I also have tried few of them and no doubt they have turned out SUPER DELICIOUS :). Yesterday I had few guests at my place and I had prepared this pulao and everyone appreciated that. Thanks a lot!! Also your Tiffin Sambar with toor dal, coconut chutney with coriander , Onion Tomato chutney, Idli, Veg fried rice (I changed this recipe a bit though) and few more are big hit. Thanks for your recipes once again!!! 🙂

Hi!! Sorry for asking something not related to your post. Which mixie you use? It has ground even little quantity in to smooth paste. The small jar in my mixie will never grind smoothly if the quantity is less. Most of the times I skip making dishes which require grinding becoz of this issue.
      Thanks in advance!!
