This post has been lying in my drafts for a while now. I adapted this recipe from Good Food cookbook. But altered the recipe to the availability in my kitchen pantry. Simple, easy to make pasta recipe that your kids would loveLove Struck. Stay tuned for more easy and taste kids pasta recipes in Rak’s Kitchen!

Ingredients(serves 2)

Macaroni (or any pasta)1/2 cup
Tomato2, small sized
Tomato puree(readymade for colour)1 tblsp
Parmesan1 tblsp + 1 tsp
Sour cream*1 – 2 tblsp
Pepper and Italian seasoning1/4 tsp each
* Sour cream can be replaced with cream fraiche.

Method

  1. Boil pasta as per packet instructions (with salt). Reserve the boiled water 1 tblsp for using later. Immerse tomatoes in hot water for a minute and peel off the skin.1-pasta
  2. Puree the tomato. Heat a pan and add both the tomato puree.Cook until the raw smell goes off.2-pasta
  3. Add Italian seasonings, fry for a minute until you get nice aroma and then add the cooked pasta.3-pasta
  4. Mix well and Add parmesan cheese. Mix well and add the reserved water to loosen the pasta. Lastly add sour cream and switch off the stove. Mix well to get a creamy texture and sprinkle the pepper.4-pasta
Serve immediately with parmesan topping.

Notes
  • Original recipe uses sundried tomatoes and cream fraiche. So if you get it in your part of world, you can make use of it.
  • Inspite the name creamy pasta, this recipe uses less cheese, that too parmesan cheese.
  • You can use ready made puree also fully in this recipe. Or omit the ready-made puree also no problem. I just used for colour.
  • Eat hot, otherwise may not taste good.
  • If you are in India, find it in Nilgiris or Big bazaar, where ever they keep cheese, butter, cream ….
