    Crispy cauliflower fries recipe, cauliflower fry

    Crispy cauliflower fries made with rice flour, corn flour and spices. Perfect as snack or as accompaniment for rice.

    This is a recipe I learnt from my mom in law. She always makes it this way. There wont be any garam masala powders, just a simple satvik way to enjoy cauliflower. Initially I was not a big fan of it but later when I tried to recreate it, I started loving it for it's simplicity. Aj used to be a big fan of this. But later he changed to gobi pakora. Vj still preferes this.

    There are few things to note while preparing crispy cauliflower fries. Parboiling makes the cauliflower softer and gets coated with the flour. Don't skip the step. Take care not to over cook too.

    Adding right amount of water to coat the flour to cauliflower is key to get perfect crispy results. If less water, the flour wont bind together with cauliflower. It tends to turn pale and flour taste will be dominating.

    If water is more you wont get the crisp result. So adjust accordingly. Corn flour helps to bind the flour. You can replace with same amount of maida (all purpose flour).

    Crispy cauliflower fries

    Crispy cauliflower fries made with rice flour, corn flour and spices. Perfect as snack or as accompaniment for rice.

    Cup measurements

    Ingredients

    • Cauliflower 1 small
    • Rice flour ΒΌ cup
    • Corn flour 1 tbsp
    • Red chilli powder 1 tsp I used sambar powder
    • Turmeric 2 pinches
    • Salt As needed
    • Oil For deep frying
    Prevent your screen from going dark

    Instructions

    • Cut/separate the cauliflower into bite size pieces. Bring water to rolling boil with salt and turmeric. When the water boils, add cauliflower. Let it boil for a minute or two. Put off the flame. Drain the water completely and transfer to mixing bowl.
    • Sprinkle rice flour,corn flour and salt.(the salt in the water would have not get absorbed in the florets, so now too u have to add. But very less is needed) Mix it well so that the powders coats the cauliflower,or else sprinkle very little water to make it bind together.
    • Heat the oil and put this mixture in a sprinkled way and cook in medium flame till golden brown and crisp. Stir occasionally in between.

    Notes

    • I have used home made sambar powder,in place of red chilli powder.
    • If you use more of corn flour,then it will turn out hard.
    • Adding more water makes soft fries, it wont turn crispy.
    • Eat within 20-30 mins after frying, otherwise it will become soggy.
    • Cooking the florets (parboiling), is very important, otherwise the flour won’t stick to the florets and it will end up in a cloudy oil.(all the flour u use for coating will be in oil)
    • If water is not added enough, it will result in pale fries, having flour taste in the fries. It also retains oil.

    Crispy cauliflower fries method:

    Serve hot,fry only when you are going to eat,other wise,it will become soggy.

      How absolutely tempting... My parents used to send me a pre-made powder that i could mix with florets and deep fry - that had some ginger garlic taste as well and definitely food coloring but i used to love it. This reminds me that i haven't had it in a long time.
