Easy potato wedges, oven baked potato wedges

Baked potato wedges

Potato wedges baked in oven with simple ingredients you will find in your pantry. With full video and step by step pictures.

Potato wedges and french fries are two things that we live on when we travel to other countries. Though I make potato wedges, it will be for a quick fix and never get chance to picture it to post. I make both deep fried version and baked version. Baked version is very rare as I don’t have patience to pre-heat, wait for sometime to get the wedges ready. Deep fried are usually quick to whip up and you will have in your hands in less than 30 mins.

I have already posted sweet potato fries and a baked version of small potatoes. So this is one of Aj’s favorite recipe and make it when ever I have enough time. I have used curry leaves just to give an Indian touch as I have also used red chilli powder.

If you want you can add just black pepper and some dry herbs along with sweet paprika/ smoked paprika. I used kashmiri chilli powder for the reason it gives a lovely colour to the fries.

Easy Potato wedges in oven

Potato wedges baked in oven with simple ingredients you will find in your pantry. With full video and step by step pictures.

Ingredients

  • 4 Potatoes
  • 1 tbsp Garlic finely chopped
  • 1 tbsp Curry leaves finely chopped (Optional)
  • 1/2 tsp Black pepper powder
  • 2 tbsp Oil
  • Salt – as needed

Instructions

  • First cut the potatoes into half. Divide and cut each half further into two.
  • Hold your knife diagonally to get equal sized wedges.
  • Take the cut wedges in a mixing bowl. Add rest of the ingredients and mix.
  • Preheat oven at 200 deg C. Line a baking tray with aluminium foil. Grease with oil.
  • Spread the potato wedges without layering. Bake for 30 mins at 200 deg C. In between, turn the wedges once for even roasting.

Notes

  • Clean the potatoes well before cutting it, to remove the dirt.
  • Depending on your oven, reduce your oven temperature if it gets burnt too fast.
  • Consume as soon as it is baked, not recommended to reheat. 
  • You can use any herb like rosemary, thyme etc.

  3. Take the cut wedges in a mixing bowl. Add rest of the ingredients and mix. You can also add curry leaves alone while you mix in between to avoid turning black.

  4. Preheat oven at 200 deg C. Line a baking tray with aluminium foil. Grease with oil. Spread the potato wedges without layering. Bake for 30 mins at 200 deg C. In between, turn the wedges once for even roasting.

Serve hot with any tomato sauce.
