Ginger cardamom tea recipe, how to make tea

May 24, 2012 by Raks Anand 55 Comments / Jump to Recipe

ginger cardamom tea recipeGinger cardamom tea/ chai is so easy to make at home. Learn how to make Indian chai with step by step photos.

I make the tea as Ginger cardamom tea always. Very very rarely make the plain tea. My dad being a  tea lover, I have seen my mom making tea this way. When it comes to tea, I have some beautiful memories related to it. It may not be interesting, still, I remember it as they are so sweet to me. When I was studying 4th standard, my dad bought his own land in Salem and it was only across the road to where we were staying in the rented house.

So when our own home construction started and after school, me and my brother go and watch the workers doing their work. My mom makes two kettles full of hot tea for the workers by herself and my father distributes to them. They used to tell the tea is awesome and they will be thanking for the ‘homemade’ tea as well. As kids, me and my brother enjoyed those days. The workers were too friendly, that we used to have a good time with them.

(Thanks to Vj for bearing me while I clicked this hot glass of tea. I found this cute ‘Tea glass’ in Daiso and thought it will be perfect for this post…)
Hope I have not bored you all with my old memories…😵 Please don’t mind. I make tea two ways. One is boil the tea leaves in water and then top with little milk. The other way is fully boil tea leaves in milk itself. The tea recipe I am sharing now is the second way.

Vijay being coffee lover, I make tea rarely. He doesn't complains when I make tea, but still I know he will like coffee than tea, so never compel myself to make tea. I love tea for sure than coffee, but I have a big problem. If I take tea, I will be sitting like an owl in the night 🦉. Yeah, I don’t get sleep! Still some times, very rarely I do make tea and drink. Ok, now on to the recipe!

    • chopping board
    • ladle
    • Boiling pot
    • peeler
    • metal strainer
    Cup measurements

    Ingredients

    • 1 & ½ cup Fresh milk
    • 1 tablespoon Ginger crushed
    • 2 Cardamom
    • 2 teaspoon Tea powder heaped
    • Sugar as needed I add 1 & ¼ tsp
Prevent your screen from going dark

    Instructions

    • First boil milk and add peeled, crushed ginger and crushed cardamom (with skin) and tea powder.
    • Simmer to low and let it boil for 5-6 minutes or until you get a good colour you want for the tea. Filter using a tea strainer and then add sugar and mix well.

    Notes

    • You can dilute the milk if you want your tea in thinner side. I like my tea rich and thick.
    • Make sure to clean the ginger well before adding to milk. Peel the skin and wash. Skin of ginger is not edible. So discard it.
    • Depending in the texture of tea granules, the amount might vary. So always refer to the back of the tea pack how much it is needed per serving and add accordingly.

Hi raji.. today i purposefully visited your blog to learn how to make tea.. I have the same habit as you, like when i drink tea, i do not sleep all night. So, i do not drink tea much, in spite of my love for it. But i make tea for my husband. Though he is a coffee lover, it mandates him to have tea after a heavy lunch. I always add cardamom while making tea. But my problem is whenever i make tea, the vessel gets burnt in the bottom. Do you have any suggestions to avoid this??

tea looks so tempting. My husband makes the best tea in the world (or so I love to think). His tea is famous in our family. They drop in only to have tea made by him and will be willing to wait if he is not at home; haa haa haa.. funny no!! Try adding one crushed pepper to your tea or one pinch of pepper powder along with ginger and cardamon. It always makes you want more. My mom adds tulsi leaves to it too. I have friends who add pudina leaves; some add cinnamon and cloves too, but it gives a masala chai effect. I am a tea lover and can drink as many tea as can be served.

      Hi Rak,
I've been following your blog for a long time now. I'm a college student in the US and I miss my mom's food and food from Madurai where I lived.
I wanted to ask you a quick question-what tea powder do you use for this?
I currently use blue label (Taj) and used to use red label but neither tastes like the tea I got in India 🙁

I use lipton yellow label, but I have to tell you it's not about the tea alone, milk also matters. Try to use fresh milk instead of the tetra pack milk.

The one where you boil it in water and then top it with milk or the one where you boil milk directly? Thanks.

If I want thick, I boil in milk, if I want to keep it light, I first boil in water, add milk and heat.:) Depends on one's taste 🙂 Tea tastes good both ways to me, I am not a regular tea drinker or I havent tasted tea outside in restaurants (other than 2-3 times) So I have no clear idea bout this.
