    Instant mango pickle recipe

    Instant mango pickle is a scrumptious condiment made under 10 minutes and very popular dish served in marriage as well as in everyday life.

    When mango is in season, this Instant mango pickle will appear more our kitchen.

    Goes well with thayir sadam just like manga thokku. You can also have it with rasam or sambar sadam.

    Pickles are known throughout the world. But there are lot of variations in the method and ingredients.

    Even within India, a pickle varies widely in ingredients and spices used.

    In south India, Tamil Nadu especially, asafoetida is a main flavor along with fenugreek seeds flavor. Mustard is just used for tempering in this.

    Instant pickle is very popular in Tamil Nadu weddings. Especially mango pickle.

    I have also seen this as a part of Onam sadhya.

    Though Mom makes this one, she also makes another simpler version with only salt, mango and green chillies.

    Both are good on its own way. Tastes great and flavourful too! MIL also makes these two versions when mango is in season.

    Though I am not a big fan of mango, I make it for Vj sake and sometimes I too have it with curd rice.

    Not that I won't touch mango. The below plate of curd rice with the pickle was eaten by me 🙂.

    Method

    1. Firstly wash and chop mango finely as show in the picture and place in a mixing bowl.
    2. Secondly, in a pan/ kadai, heat oil and temper with the items given under ‘To temper’ table in order .
    3. Switch off the stove and add fenugreek seeds powder, turmeric,red chilli powder and quickly mix well.
    4. Finally, add salt and raw asafoetida and mix everything with the chopped mango.
    5. Instant mango pickle ready!

    Store in a jar and keep refrigerated, can be used for 4-5 days. Goes well with the cool biryani😎(thayir sadam) 😁. Or even rasam rice or any mild rice varieties.

    Cup measurements

    Ingredients

    • 1 Mango unripe, Raw
    • 1 teaspoon Red chilli powder Kashmiri
    • ⅛ teaspoon Turmeric
    • 2 pinches Asafoetida
    • 2 pinch Roasted fenugreek seeds powder
    • Salt

    To temper

    • 1 tablespoon Sesame oil
    • ½ teaspoon Mustard
    • Red chilli optional
    • 3 pinch Asafoetida
    Prevent your screen from going dark

    Instructions

    • Firstly wash and chop mango finely as show in the picture and place in a mixing bowl.
    • Secondly, in a pan/ kadai, heat oil and temper with the items given under ‘To temper’ table in order .
    • Switch off the stove and add fenugreek seeds powder, turmeric,red chilli powder and quickly mix well.

    Notes

    • I didn’t add red chilli, but it's a nice addition to the pickle.
    • Adding asafoetida both while tempering and mixing give nice flavour.
    • Also adjust the spice and salt according to the tanginess of the mango.
    • I always have roasted fenugreek seeds powder with me, so add it to all pickles easily. If you dont have, just roast ½ teaspoon of methi seeds and crush it with hand mortar and pestle and add it.

      amma makes this for biryani when we are out of pickles. i love it as it is also, and used to eat a lot of it as a kid and then feel sick later!

      This is my all time favourite. I always always have this n mmy fridge. Always have manga thokku, manga kari and then the maavadu. Its an addiction. Lovely clicks raks...almost reminded of summer holidays, when all of us cousins used to sit around my grandmother and she used to give us thayir sadam and this oorga in our hands. Nothing can bring back those days!
