    Kadai bhendi | Kadai bhindi recipe

    Kadai Bhindi is a perfect side dish for phulkas or other Indian flat breads, rice. Crushed coriander seeds is the best thing I love in this dish. Let's see how to make this delicious dish with step by step pictures.

    I learnt this recipe from Vah chef’s video and tried this for first time, the outcome was very nice.

    I made one or two changes to suit my taste . The main drawback is, too much usage of oil!

    Though I tried to use less than I saw in the video, deep frying the Bhendi is too much for me.

    One can just do with less oil in kadai itself, but former really made its stickiness Zero. It's your choice!

    My notes

    • I wash, air dry and keep inside fridge. It is always better to wash and air dry prior instead of pat drying.
    • Though the bhindi may have slight stickiness initially, as you cook, it will go away. No need to worry.
    • You can skip the whole spices - cinnamon, clove and cardamom while tempering. 
    • Instead of ginger garlic paste, you can use minced garlic and ginger. You can also skip and add just lots of ginger juliennes. 
    • Cooking bhindi without slime is the main key in this dish. Deep frying completely removes the stickiness. Even if you sauté, use generous oil so that the stickiness is gone. 
    • Instead of finely chopping onion and tomato, I cut one and cube the second one. But add together. This gives good looks to the Kadai bhindi.

      Kadai bhindi method

    1. Wash, clean the ladies fingers and pat dry completely.
    2. Cut them into bite size pieces. Deep fry them, if desired or saute them with 2 tablespoon of oil in a kadai, without changing the green of the vegetable. Make sure the stickiness is gone.

    1. Heat a broad pan with oil, add the tempering items followed by the crushed coriander seeds.
    2. Immediately add onions, slit green chilli and saute till just onion turn transparent.
    3. Add ginger garlic paste and saute till raw smell goes off.

    6. Add the chopped tomatoes,with little salt to make it get soft faster.

    Add turmeric, garam masala, red chili and coriander powders and mix well and fry till tomatoes gets mashed up.

    7. Add then add cashewnut paste if adding and cook for a min till becomes non sticky.

    8. Now, in goes the capsicum, deep fried ladies fingers and salt if needed.

    5-add-capsicum

    9. Mix well and cook covered for 2 minutes.

    If you want it semi gravy, you can add ½ cup of water.

    Stir well and continue covered again for another 2 mins. Garnish with coriander leaves lastly.

    6-bhindi

    I didn't had sadly, so I didn't add, don't search in the pics.

    Serve kadai bhindi hot to taste the best, with rotis or with pulav of your choice. I served with peas pulao.

    Cup measurements

    Ingredients

    • 25 Ladies finger Bhindi medium size
    • 2 Onion chopped
    • 2 Tomato chopped
    • 1 Capsicum cube
    • 2 teaspoon Ginger garlic paste
    • ¼ teaspoon Turmeric
    • 2 teaspoon Coriander seeds powder
    • 1 teaspoon Red chili powder
    • ½ teaspoon Garam masala powder
    • 2 Green chilies
    • 10 Cashewnut optional
    • 2 tablespoon Oil
    • ¼ cup Coriander leaves chopped
    • Salt

    To Temper

    • 1 Cinnamon
    • 1 Clove
    • 1 Cardamom
    • 1 teaspoon Cumin seeds
    • 1 tablespoon Oil
    • 1 teaspoon Coriander seeds crushed coarsely
    Prevent your screen from going dark

    Instructions

    • Add then add cashewnut paste if adding and fry for a min till oil separates.
    • Now, in goes the capsicum, deep fried ladies fingers and salt if needed.
    • Mix well and cook covered for 2 minutes.
    • If you want it semi gravy, you can add ½ cup of water and cook.
    • Stir well and cook covered again for another 2 mins. Garnish with coriander leaves lastly.

    Notes

    • You can omit cashew paste if you want it simple and dry.
    • If you need more of gravy kind then add little water and boil for few mins.
    • Add Kasoori methi if you like. I do not like the flavor overpowering and want coriander flavor more, so skip adding it.
    • I updated the step by step pictures later and skipped green chillies and coriander leaves, so will not be seen in steps.

      Hey Raks..I have been a great admirer and follower of u r blog..Tried ur bhendi masala ..Would like to add a little note on frying the bhendi..Instead of deep frying or using a more oil to fry bhendi we can microwave for 4 mins then saute it in tawa..it reduces the oil usage ..

      It could be coz of dhaniya powder, next time, try reducing 3 tsp to 2 tsp.

      I just tried the recipe. Came out really well. One change is I think u need to add more tomato for the gravy seems less for the quantity of bhindi n capsicum.

        I did not add, it's optional. You can add along the tempering items.
