Kaju Katli recipe – Learn how easy it is to make this Indian sweet recipe at home, made for Diwali with quick video and step wise pictures.

I have tried Kaju katli two three times before and dint get it right. This time I again wanted to try and yeah, I got it right! So wanted to keep this recipe here in my blog. I referred two blogger friend’s blog this time, here  here. It tasted exactly like we get from sweet shops and loved it! I found out the mistake I did previous times, the powdering part has always been a trouble to me.

Before this I used to grind the cashews I keep in the fridge, so while grinding, it became sticky and dint get powdered properly. This time I dint do that mistake. Also the perfect smooth effect to the sweet will be attained only when we knead the katli dough/mixture. So will keep this as my main points,the next time I make this sweet again. Kaju Katli recipe

Ingredients

  • 1 cup Cashew nuts
  • ½ cup Sugar
  • ¼ cup Water
  • 1 tbsp Milk If needed
  • Ghee - Just for greasing

Instructions

  • Powder the cashews in a dry mixer. You have to be careful here, just grind it in a stretch, don’t stop in between and grind. You will be sure able to see the powder in the transparent lid, so keep grinding until you get fine powder.This will not take much time. Also never grind the cashew which is cold,taken from the fridge,grind it when it is in room temperature. When I ground 1 cup of cashews, I got more than a cup of cashew powder, but I used 1 cup,heaped(like a mountain) cashew powder. There was some 2 tblsp left for me.
  • Boil sugar with water and keep stirring. Keep little water in a small bowl and just pour few drops in the water to check the consistency. If you pour few drops, it should lay a fine thread that doesn’t gets dissolved in water immediately when you touch. Or you can also check between your fingers to see if it forms a string.
  • At this stage,lower the flame add the powdered cashew and keep stirring.Say for 3-4 minutes in low flame and your mixture gets thick, leaves sides, switch off the flame. Smear your hands with water and test by rolling a small pinch of the mixture in between ur fingers. You should be able to form a non sticky ball. This is the correct consistency.
  • Keep stirring in the pan itself with the ladle and the mixture turns more like a dough.When the mixture is still warm,take it to another clean platform/countertop and keep kneading. Mine was a bit dry, so I sprinkled some milk and kept kneading.The dough was grainy till then, but after kneading the dough really became smooth. I used gloves for kneading,so if you want u can use little ghee while kneading.
  • Roll the dough into thin layer and cut it diagonally to make pieces.You can first draw lines lightly with the knife tip and then cut into diamonds to get perfect shapes.

Notes

  • I used milk only as my mixture was dry while kneading. If its fine then no need to add milk while kneading.
  • If you add milk while kneading,shelf life is less,so keep refrigerated.
  • Use less water to make sugar syrup to get the consistency quickly. While making sugar syrup,keep the flame in medium if you are nearing the consistency.
  • If you add cashew powder before the sugar syrup reaches the consistency, then the dough will be sticky. So the sugar syrup consistency is important.
  • While powdering,if you grind for more time,the powder sticks and gives a coarse looking powder. But that’s ok,it will be smoothed when you are kneading. But note that coarse look on result of over grinding – is different from the real coarse powder. So don’t get confused.
  • Till the end your mixture will not be that smooth,but when you knead the  mixture turns to a smooth dough. So don’t panic like me 😉

 

How to make kaju katli method:

    Thts an awesome recipe. yummy to look and taste. once i had tried this sweet in my microwave oven and ended up making kaju balls instead of kaju katli. Did the same mistake as u .. used the refrigerated kaajus and the dough resulted rough and sticky. But now i am cleared. thanks for sharing with tips and pics. This sweet is ofcourse one in my diwali sweet list.

    Ah! The first time I made this I made the same mistake of using refrigerated cashews as I store the cashews in the fridge. Amma was quick to point out my mistake and also the mistake of my adding elaichi essence. So now I can easily say I have mastered it. Clicks are cool and the notes section will be very helpful for first timers.

    ரெண்டாவது முறை முந்திரி லைட் டா வறுத்து பவுடர் பண்ணி செய்தேன். அந்த தடவை லைட் பிரவுன் கலர் ல வந்தது.

    I am new to your blog and all your recipies with pictures are mouthwatering.     Hi Viji,

    May be you stirred for bit more time or you did in higher heat.Another possibility is the sugar syrup consistency. But as I have mentioned in the post, dont worry if its dry. Next time immediately sprinkle some milk and knead well. It will work.

    I tried it but failed . I realised it when i ground cashews….it became a paste. I continued with the steps and made some changes. I added milk powder to the sticky paste and set it to harden. Believe me…..kids loved it! 🙂

    I tried this Kaju Katli today, followed each line of your recipe and came out perfectly…tasted so yummy than the store bought…thank you thank you so much for your detailed recipe..i tried 3-4 times before everytime i went wrong with the sugar syrup or with the powder now your recipe helped me a lot n got perfect. My H and kids liked it a lot, only thing is i couldn't make perfect diamond cut like yours 🙁 should learn cutting also if u would have showed that i will be 100% right 🙂

    i could nt need the dough as it was very hot… i allowed it to cool then it became crumbles…. i added some milk (about 4 spoons) and rolled them and named them as kaju rolls…. may be i failed with the consistency..will try again…

    I tried ur recipe. I must say u have some amazing recipes here. When I started making the dough it was too hot and dry, I tried adding milk but it never became soft. Don't know what went wrong.

    I couldn't get this to work. Very dry and grainy at the end. I tried to kneed it like described, and added milk to make smooth, but it never held together like a dough.

    yummy yummu yummy….. i cnt believe i cud actually make ma fav sweet myself, so easy and fast to make too.. only thing is that i have to use all my will power not to finish it all myself. have to leave atleast a piece for my hubby to prove i made it, thanku sooo much 🙂 love u

    I too tried this reciepe…but failed…the taste wise good but i could feel the sugar crunches inbetween and when i asked my mom…she says i might have added very little water to sugar to dissolve…is it true or wat is the cause…pls advice..

    Your mom might be right, also if the syrup passes the above mentioned stage, that could happen.Even if this happens next time, adding milk and knead again for sometime, it will go off.

    Actually for the first time I just kept it on flame for a bit longer time but then I added back sum water and then carefully followed the same steps as before and it came out just amazing! I was jus too lucky to not have lost the taste or quality even then :):):)

    This recipe is so simple and easy to make. Also it saves almost half the amount compared to store price. I tried with taking half the quantity you have mentioned, it was very soft and delicious.

    Its not same as jamun syrup this is thicker than that and you can powder before making syrup and keep

    I tried it yesterday, it came out super good! One question though… Is it ok to allow the mixture to cool down before kneading? And will it come out nice if I used warm water instead of milk if necessary… Pls let me know as I am planning to make large qty tomorrow. Thanks raji, well done.

    Yes sure, you can wait until its warm enough to handle. warm milk is not necessary, milk at room temperature will do

    Hi Raks! Nice recipe and time saving also. I also make Kaju Katli but in different way. I soak kaju first for 3/4 hrs, then after removing water totally I grind it with sugar until getting it in smooth form. Now this paste is ready to cook, it has to be stirred till the paste leave the pan and form in a dough. Now after kneading you can spread it & cut it as usual.
    Sorry for daring to put my recipe here but I just want to share with you

    Hi raks I tried the recipe Tday and it came out so yum.. But everytime I grind cashew powder am not getting it dry fine powder. Kind of coarse in texture and binding together,almost like dough? Wat I might doing wrong in it?

    Use fresh cashew nuts, make sure nothing is wet (mixer, lid and cashews) Do not grind for long time, it will leave out oil.
