Kaju strawberry, a latest sweet I tasted when I visited Chennai this year. My relative got it when they visited us.

Me and Aj loved this sweet so much that my MIL packed this for us. It had a rose flavour in the fruit part as well as an ice cream flavour in the leaf part. From that time I have been thinking to try this out for this Diwali 2015. But not sure about the method and recipe.

I knew it is made of Kaju (Cashew nuts) and searched as Strawberry sweet in Google but never found recipe or method for this. But saw the name of this sweet as Kaju strawberry in online sweet shops. I am sure you might have come across this sweet in mithai shops. So here’s how to make this Diwali special sweet recipe.

I sent this recipe for my monthly step by step series in Kungumam Thozi, this time since Diwali, I thought of giving a sweet recipe for Diwali. The magazine is out, you can get your own copy for Tamil version of the recipe.

I did this twice, Aj really liked it a lot. Even Vj had this. Once clicked picture and once took video. I really enjoyed making this sweet and felt happy and content. Kaju strawberry

Kaju strawberry, a latest sweet I tasted when I visited Chennai this year. Learn how to make this fancy sweet with full video, stepwise pictures.

Cup measurements

Ingredients

  • Cashew nuts – 1 cup
  • Sugar – 1/2 cup + 1/8 cup
  • Rose food colour – 1/4 tsp
  • Red food colour – 1/4 tsp
  • Green food colour – 1/4 tsp
  • Rose essence – Few drops
  • Vanilla essence – Few drops
  • Water as needed

Instructions

  • Powder the cashew nuts to a fine powder in a mixer. Measure 1 cup of the powdered cashew nut.
  • In a heavy bottomed pan, prepare sugar syrup first with 1/2 cup sugar and 1/4 cup water in medium flame. Bring to one string consistency. Refer video for one string consistency. If you check a drop of syrup in between your forefinger and thumb, a string will form. Add rose essence, rose and red food colour to this.
  • Add powdered cashew and keep mixing in medium flame.
  • At a stage, it will start leaving the sides of the pan. Check if its right consistency by greasing your hands with water and if you roll a small pinch of the cashew mixture, you will be able to roll a non sticky ball.
  • Switch of the flame and keep mixing to get a thick dough. Transfer to a clean kitchen counter top. When the dough is warm enough to handle, you can use few drops of ghee to grease your hands if needed and knead the dough to make it smooth dough. If it seems dry, add one or two tsp of milk.
  • Knead to make it smooth and divide the dough to 12 equal sized balls.
  • Shape it to cones that resemble strawberry. Refer video for better understanding. You can use a fork or tooth pick or any tool to press and make it look like a strawberry.
  • I have used a peeler to give the impressions to resemble the strawberry looks.
  • Now repeat the same procedure for green dough (measure the cashew powder and use 1/2 the amount sugar and 1/4 the amount water). Add green colour and the essence while preparing the green dough. Divide into 12 small sized balls.
  • Flatten each into rounds and cut into quarters. Stick each quarter to the strawberry we made to resemble its leaf.
  • You can also do it in the way I have shown below. Use a clove for decoration as well as flavour. Arrange in paper liners.

Notes

  • The whole process should be done in medium flame. Otherwise you may loose the right consistency.
  • Pink and red gives the strawberry colour.
  • I used liquid colour and recommend the same to use. Look for natural food colours, available though a bit costlier comparatively, it doesn’t have any carcinogenic ingredients.
  • As soon as you make the dough, you should shape it, without letting the dough dry.

Stays good for 3-4 days in room temperature and about a week if in refrigerator.

    Lovely and it is a great to the eyes the way you have clicked. I have a doubt. When you say 1 cup of cashew powder, do you mean that we need to just use half of the powder to make the strawberries and the reminder half for the green part. Please advice.

    It's a sweet called as marzipan which is generally available in selected cake shops during Christmas time. This sweet can be made of cashew paste or almond paste etc. your presentation is really wonderful!

    awesome work raji. ..hats off to your passion…The sweets look like a real strawberry. ..great job..just a small doubt..do we get 1 1/4 cups of powder for 1 cup of cashew and in that we need to use 1 cup for red color and 1/4 cup for green color? hope my understanding is right…

    Yes roughly 1 & 1/4 cups of powder. even if its more than that, adjust the sugar and water measurement for the green dough accordingly.I hope its clear

    If you grind 1 cup of cashew nuts, you will get 1 cup plus 1/4 cup roughly. so I used 1 cup for pink dough and the rest for green dough.

    Hi Raks, i have been a big fan of your recipes. Your website is my go-to place for diwali sweets and snacks. i made kaju strawberry and it came out really good. i like kaju sweets to be less sweeter. Can i reduce the sugar to 1/4 cup +2 tbsp? Will that affect the consistency?

    You can try reducing a little, but not half 🙂 It will sure affect the texture. May be try a little quantity and try, it will be useful to you.
