There are several ways to prepare the dough, that is the outer skin.
- Using Homemade rice flour
- Then with store bought rice flour
- Using wet rice batter method
- Also commercially available kozhukattai flour
- And my way, the idiyappam flour.
I always use store bought idiyappam flour for preparing kozhukattai. It turns out to be an easy method as well as the kozhukattais turn out soft. Also stays soft even after cooling down.
The dough is easy for shaping the kozhukattai, never breaks while shaping or after cooking. The fact that it is processed helps it cook easily as soon as you add hot water.
If you want, you can use any readymade rice flour bought from stores. Make sure its good quality, fresh in stock and mainly fine flour, not coarse.
