Kuzhambu recipes:

Tangy tamarind based gravies or no dal base kuzhambu recipe links. A basic rule for all kuzhambu is to balance spice, Tanginess of tamarind and salt. Just like in any recipe!

Most problem I used to encounter when I started cooking was my kuzhambu too tangy. Later learnt adding spice (sambar/ kuzhambu powder) will fix the issue.

How to reduce tamarind taste in puli kuzhambu?

Add more spice powder, which ever you use. We usually have this milagai thool that we use for all kuzhambu, so adding more of that will remove the excess tamarind taste.
Also add lot of water and boil for long time to thicken it. So that the raw smell goes off.

How to thicken my kuzhambu?

Our milagai thool (Spice powder) has a major portion of dals which acts as thickening agent in the gravies when added in right amount. You can also add 1 tsp of rice flour dissolved in 1 tbsp of water to thicken the gravy.

Why my kuzhambu is watery?

Add more spice powder or reduce the total amount of water you add to the gravy. Boil longer to thicken. Use thickeners like rice flour or corn flour to thicken.

How to fix my kuzhambu if it is not balanced in taste?

Tanginess is more – Add more spice and salt to balance.
More salt – add a potato and leave it inside to absorb the excess salt.
Very spicy – Add 1/2 tsp of sugar or jaggery. Adding a tomato also helps.
