    I always sprout whole moong by soaking some extra, when I make pesarattu. I usually make Sprouts fired rice, this time thought of making this salad.

    Here is a simple moong sprouts salad recipe I make with the sprouts. No such rules or specific ingredients, just add veggies of my choice. The main ingredient I make sure to add is my favorite onion, tomato, lemon juice and cilantro/ coriander leaves and chat masala.

    Variations

    • My friend actually suggested steaming the sprouts for few minutes. But I thought of trying it raw as it is more nutritious.
    • You can add cucumber or even some fruits like pear, apple to give a sweet twist.
    • You can add some nuts to make it more nutritious as well as give some crunch in the salad.

    Storage

    You can keep the salad refrigerated for about 5 days, but I recommend keeping sprouts in fridge and tossing together other ingredients freshly everyday.

    Cup measurements

    Ingredients

    • 1 cup Whole moong sprouts
    • ¼ cup Chopped onion
    • ¼ cup Chopped tomato
    • ¼ cup Grated carrot
    • ¼ cup Grated radish
    • 1 Lemon's juice 2 tsp
    • ½ teaspoon Chaat masala
    • 1 tablespoon Cilantro chopped
    • Salt & pepper - As needed
    Prevent your screen from going dark

    Instructions

    • Just toss everything in a bowl. Enjoy immediately. Add salt carefully as chat masala already has salt in it. Such easy salad right?

    Notes

    • You can add veggies like cucumber,cabbage too. If you want to pack of snack box,avoid tomato,cucumber as it leaves water.
    • You can chop veggies instead of grating. You can also steam the sprouts if you don’t like to chew. But not sure about the nutrition.

    How to sprouts green moong

    1. Clean

      Wash the green moong well.

    2. Soak

      Add enough water and soak the green moong

    3. Sprouting

      Drain water, but make sure there is little moisture. Keep it closed until you see small sprouts start appearing.

    4. Refrigerate

      Keep it refrigerated. It will continue sprouting. Make sure to sprinkle water if it gets too dry. Also toss couple of times in between.

    Method

    1. Just toss everything in a bowl. Enjoy immediately. Add salt carefully as chat masala already has salt in it. Such easy salad right?
