    Mushroom fried rice Indian style with step by step photos. Tips and tricks to make a perfect flavorful fried rice.

    This was the first recipe I tried with mushrooms before I tried the mushroom matar gravy, coz of its simplicity. And it came out really good, that we all of us finished it.

    So if you are like me (not a fan of mushroom/ new to cooking), try fried rice with mushroom first. It can be made in jiffy with less effort, just like the regular fried rice but just add on mushrooms to it.

    Since mushroom has high nutritional value, sure we can be content giving this to our family. Let’s start this week with this recipe and stay tuned for more exciting recipes coming up here.

    🍄 Ingredients

    Mushrooms - I have used white button mushrooms available widely. This has neutral flavor and no odd smell to begin with.

    Just cut into quarters, slice it thinly.

    Rice - Cooked rice, especially leftover rice kept in fridge works best for fried rice. I used basmati rice (long grain), you can use any variety but make sure it is separate grain, not mushy/ sticky.

    💭 Top tip

    • Entire process for fried rice should be done in high flame for perfect flavor, texture.
    • Make sure to not over cook vegetables, it should retain it's crunchiness and color.
    • Oil should be more in order to get the glaze, shine and texture. You can use healthier oil choice.

    📖 My notes

    A perfect fried rice should have the rice 'fried'. Meaning, after adding cooked rice and tossing, you should hear crackling sound of rice. So make sure to add enough oil and toss in high flame.

    Cooking rice - Wash rice until water draining runs clearly. Soak for 10 mins in warm water. Pressure cook for 3-4 whistles in medium flame. For 1 cup rice, 1 & ½ cup water will be right. You can also use upto 2 cups water per cup of rice if you want rice in softer side.

    Once rice is cooked, spread the rice immediately over a broad vessel or plate. Add a drizzle of sesame oil add fluff gently. Once cooled, separate the grains and you can proceed with the recipe. Or refrigerate to make the rice more firm.

    Ingredients

    • 2 cups Cooked rice
    • 8 Mushroom
    • ½ Carrot
    • ½ Capsicum
    • 1 tablespoon Garlic Finely chopped
    • 1 Green chilli
    • 4 Spring onion sprigs
    • 1 Black pepper powder
    • 1 teaspoon Soya sauce
    • 2 teaspoon Chilli tomato sauce
    • Salt – As needed
    • 3 tablespoon Olive oil
    Prevent your screen from going dark

    Instructions

    • Cut carrot into thin strips, capsicum too into strips. Chop the spring onion green and white part separately. If no much white part in the bottom, use ½ regular onion. Slice mushrooms and cut each slice to half.  Heat a pan add oil, add garlic and give it a stir. Add onion and slit green chilli and fry till transparent.
    • Add carrot and fry for a minute in high flame, followed by mushroom and capsicum. Fry for one more minute in high flame.
    • Once mushroom is cooked, add salt, both sauces, pepper powder and lastly the green part of spring onion. Mix well.
    • Add cooked rice lastly and toss until the rice gets heated up.

    Notes

    • I used white button mushrooms. Always use mushrooms within a day or two as you buy.
    • You can add peas, corn or cabbage in the same recipe.
    • Chilli tomato sauce can be replaced with pure chilli sauce.
    • I have used black pepper, white pepper can also be used.
    • I used basmati rice, you can use any left over rice too.

    2. Add carrot and fry for a minute in high flame, followed by mushroom and capsicum. Fry for one more minute in high flame.

    Step 2 saute vegetables

    3. Once mushroom is cooked, add salt, both sauces, pepper powder and lastly the green part of spring onion. Mix well.

    Step 3  sauces

    4. Add cooked rice lastly and toss until the rice gets heated up.

    Step 4 toss with rice

    Serve hot with any manchurian recipe like baby corn manchurian, cauliflower manchurian, chilli paneer gravy or veg manchurian gravy if you want gravy kind.
