Paneer kheer recipe | Easy Indian desserts

Paneer kheer, an easy dessert with the ingredients available at home. Yet a rich sweet to serve in special occasions and festive occasions. I have not planned to try this, but saw in an old cookbook I had. Since it was simple and easy, I thought I will give it a try. I have tried it with ready made paneer we buy frozen, but you can do it with homemade paneer too. It turns out really good. Both me and Vj loved it. This could be helpful now during Janmashtami. Prep Time: 20 mins  |  Cook time: 30 mins   |  Serves: 5

Ingredients

Paneer – 200 gm


Milk – 3 cups


Sugar – 1/4 cup + 2 tbsp


Cardamom – 1 or


Rose essence – 2 drops


Saffron – few strands


Sliced pistachios – 2 tbsp


Method

  1. Keep paneer immersed in hot water until soft. Grate it or crumble it as fine as possible. Boil milk.
  2. 1-paneer-kheer

  3. Simmer the flame until the milk reduces to half. Soak saffron in milk and add it to the reduced milk along with sliced pistachios. Simmer for 2 more minutes. Switch off the flame and keep aside.
  4. 2-add-saffron-nuts

  5. Heat sugar with 1/4 cup water and melt it. Add grated paneer to it.
  6. 3-add-paneer

  7. Mix well and switch off the flame. Add the boiled reduced milk.
  8. 4-add-milk

  9. Add cardamom or rose essence and mix well. Cool down and keep refrigerated.
  10. 5-ready

Notes

  • Make sure to grate the paneer finely.
  • Adjust sugar quantity as per your choice.
  • Soak pistachios in warm water for 10 mins and peel off the skin if any. Slice it and use in the recipe.

Serve cold, tastes like rasmalai in kheer form.
