    Paneer pasanda is an extremely delicious creamy gravy with paneer koftas in it. Step by step photos for easy understanding.

    I think there are lots of versions of Paneer pasanda recipe. The recipe I am sharing can be taken as paneer kofta in a rich, creamy gravy.

    It can be a little bit of work but sure we can make for special occasions. The gravy and the kofta is so rich and heavy that one can maximum have 2 pieces.

    I slightly adapted this recipe from Tarla dalal. Let me share my own version of this paneer pasanda.

    Paneer pasanda recipe

    Paneer pasanda is an extremely delicious creamy gravy with paneer koftas in it. Step by step photos for easy understanding.

    Cup measurements

    Ingredients

    • 1.5 cups Paneer crumbled
    • 4 tablespoon All purpose flour Divided
    • ½ teaspoon Pepper
    • 1 Green chilli chopped
    • Salt
    • ½ cup Bread crumbs or 3 bread slices
    • Oil - As needed

    Ingredients for the gravy

    • 1.5 cup Onion sliced
    • 8 Cashews
    • 1 teaspoon Ginger garlic paste
    • ½ cup Curd
    • ½ teaspoon Garam masala
    • 1 teaspoon Red chilli powder
    • Salt
    • 2 tablespoon Oil
    • 2 tablespoon Coriander leaves
    Prevent your screen from going dark

    Instructions

    • Soften paneer cubes firstly by immersing it in hot water for 10 minutes.
    • After that, drain completely and then grind in a mixer to make crumble.
    • Then, in a bowl, mix paneer, pepper, chilli, salt and 2 tablespoon all purpose flour (maida)
    • Make  small cutlets of your choice of shape. I made it a little oblong.
    • Now, make a thin paste out of 2 tablespoon maida and water.
    • Dip the cutlets in the the paste. Then coat it with bread crumbs and arrange in a plate.
    • In case you don’t have bread crumbs, you can grind the bread slices to get fresh crumbs.
    • Heat a non stick pan with oil drizzled. Cook the cutlets and cook both sides (drizzle oil when you flip) to golden brown.
    • For the gravy, fry ginger garlic paste firstly. Then add onion and cashew nuts, fry until onions turn golden brown.
    • Cool and grind to a smooth paste with a little bit of water.
    • After that, heat pan with oil and fry the ground paste for 3-4 minutes in medium flame.
    • Add garam masala and red chilli powder and fry until oil separates.
    • Add well beaten curd and mix well. Cook until oil separates from the gravy.
    • At this stage add another ¾ cup of water and bring to boil.
    • Arrange the prepared cutlets in a bowl and pour the gravy over the cutlets. Garnish well with chopped coriander leaves.

    Notes

    • Make sure the gravy is not too thick. The gravy should be hot when you pour over the cutlets.
    • You can make the cutlets until coating them in the bread crumbs- the before day and refrigerate and make cutlets the next day along with gravy to make it easier.
    • Cutlets can be shallow fried or deep fried
    • Beat curd until smooth or the gravy will curdle.
    • You can add kasuri methi to the gravy.
    • 3 tablespoon Cooking cream can be added for richness.

    How to make paneer pasanda

    3. For the masala, fry ginger garlic paste, onion and cashew nuts until onions turn golden brown. Cool and grind to a smooth paste with a little bit of water.

    4. To make gravy base for paneer pasanda: Heat pan with oil and fry the ground paste for 3-4 minutes in medium flame. Add garam masala and red chilli powder and fry until oil separates.

    5. Add well beaten curd and mix well. Cook until oil separates from the masala. Add another ¾ cup of water and bring to boil.

    6. Arrange the prepared kofta in a bowl and pour the gravy over it. Garnish well with chopped coriander leaves.

    Paneer pasanda ready! You can enjoy this exotic side dish served with any mild pulavs or roti / naans.

      I added curd and sour taste was there.
      Can milk be added?

        Please use curd that's not sour. Also add spice and salt enough to balance, so that sour taste is not more. You can add little milk to reduce sour taste too.
