Pasi paruppu payasam is quick, easy recipe to prepare on festival days. A traditional recipe my mom makes for even a Friday quick payasam.

Especially, the flavour of the pasi paruppu payasam gets enhanced if we roast it slightly and prepare it, this is the tip I learnt from my mom. Also, I sometimes directly fry the dal in pressure cooker (small) and make it in the same vessel in one pot. This is the fast as well as easy way too. Moreover, if we cook in open pot, I found it takes more time. In fact, one of the easy and quick to make payasams, next to the Aval payasam. My mom makes this very often for her Friday Thiruvilakku poojai. This is very flavourful and my favourite too…I made this payasam last week for Aadi perukku.
Few things to note for quick and perfect pasi paruppu payasam:
- Use small pressure cooker for speeding up the process.
- Roast the dal for best flavor.
- Melt and filter jaggery if it has impurities.
- Mash the dal slightly to thicken the payasam. This also prevents milk splitting after adding jaggery, as it helps in binding.
- Do not add jaggery to hot boiling payasam. Simmer and add.
- Simmer the payasam after adding jaggery without boiling briskly.
- Use UHT tetra pack milk for rich taste as well as less chance of curdling.

Pasi paruppu payasam recipe
Equipments (Amazon Affiliate links)
- Pressure cooker, 3 Litre
Ingredients
- ½ cup Pasi paruppu Moong dal
- ¼ cup Jaggery adjust as per ur taste
- ½ Milk
- Water
- 1 teaspoon Ghee
- 1 Cardamom powdered
- 4 Cashews broken into pieces
Instructions
- Fry moong dal with little ghee until you get the roasted fragrance, also you should not let it brown too much.
- Add enough water (¾ cup, approx) and milk and pressure cook up to 3 whistles.
- After done, mix well in a mashing way and add powdered jaggery to this.
- Boil in low flame for 2 minutes and add milk/ water as per the need to adjust the consistency.
Notes
- You can cook fully in milk, instead water for more rich taste. But make sure the milk you use is boiled and cooled if its fresh milk especially.
- If you feel your jaggery has impurities, first heat the jaggery with water just to immerse it and melt the jaggery. Strain it through a metal strainer and add this to the payasam.
- You can add raisins for enhancing the taste if you like.
- Don’t over cook and mash the dal and make the payasam like porridge. The texture is very important.
