    Sev puri recipe | Dates tamarind chutney recipe

    Sev puri recipe with sweet chutney (dates tamarind chutney) recipe. This is a popular street food with crispy puri, sev and chutneys as main ingredients.

    I have an endless love towards chat items. Right from my childhood days I love all the chat items.

    And after long time I tried this today,a real treat for my taste buds! I referred vah chef for the puri recipe and Priya’s blog for sweet chutney. Check the ingredients list for respective recipes.

    Dates tamarind chutney method

    1. Pressure cook the dates and tamarind with very little water upto 3 whistles.

    2. Cool down and extract a thick juice from tamarind, grind the dates in to smooth paste.

    3. Mix the tamarind extract, dates paste, jaggery, water and bring to boil.

    4. Add red chilli powder, chat masala or black salt and mix well. Boil until glossy.

    5. Add the roasted cumin powder lastly and give a boil.

    Add powdered jeera

    Let the chutney be thick like the tomato sauce in consistency.

    Method

    1. Break the puris in a plate and sprinkle all the ingredients one by one. I used lemon juice to mix it with onion.

    Sev puri recipe

    Sev puri is a popular street food in North India and across the country with crispy puri, sev and chutneys as main ingredients.

    Cup measurements

    Ingredients

    • 14 Dates de seeded
    • 1 tablespoon Tamarind
    • 3 tablespoon Jaggery
    • ¾ teaspoon Red chilli powder
    • ¾ teaspoon Chat masala or black salt
    • ½ teaspoon Cumin seeds roasted and powdered

    For making sev puri

    • 8 Crispy mini Puri
    • ½ cup Sev
    • 1 Potato boiled and cubed
    • ½ Onion finely chopped
    • ½ Tomato finely chopped
    • 2 tablespoon Sweet chutney
    • 3 teaspoon Green chutney
    • 1 tablespoon Coriander leaves Finely chopped
    • ½ teaspoon Chat masala
    • 1 teaspoon Lemon juice
    • 1 tablespoon Mango Finely chopped
    • 1 tablespoon Pomegranate
    Prevent your screen from going dark

    Instructions

    • Enjoy immediately.

    Notes

    • You can add raisins along with dates in sweet chutney. Can be stored for a month in refrigerator. Jaggery should be adjusted according to the sweetness from the dates. But more the jaggery, glossy your chutney will be.

      tempting sevpoori, with nice stepwise pictures.The red chutney click is awesome and loved the click which has a sevpoori on the spoon. I too have bookmarked a chat recipe from vahchef a very long back, yet to try .

      I am amazed that you can make a small portion of the sweet chutney. I always land up making a pickle jar full of the chutney. Its nice to get a smaller portion.The chaat looks absolutely delicious.

      Wow I am drooling raji..I can live in chaats all day and many days too.. I am too tempted and I do almost the same way. I usually do pooris and fill the boxes first day and next day is chaat day for us, enjoy everything in one shot. By the way all the clicks are very beautiful and last one is super !!! Hope u had nice chaat day !!!I too store this chutney and red chutney always in my fridge and make green chuteny when needed.

      Hi,
      All your recipes are awesome... I tried most of them and came out very good. I also learnt how to present it 🙂
      I tried the pooris for pani poori but it wont come out round/ spherical... Most of them were like flat and only few came out good...
      I have 2 questions...
      1. Is sooji raw or fried ?
      2. Is it ok to use eno instead of club soda ?

      Raw sooji only, eno can be mixed in water and use in place of soda. Make sure u roll thin and oil is hot to get fluffy poori

      Cooking soda will make the puris turn red. So just make it plain with warm water. Not sure how many puris, if I make again I will update.
