Check out another easy fix corn spinach sandwich recipe in my website. Pair it with a chana salad and it's a balanced meal.
Ingredients
- Spinach - I used the local spinach we get here in Fairprice. You can use baby spinach or Indian spinach (palak) too.
- Cheese - Mozarella or cheedar is easy option available widely. Monterey cheese and Gouda also tastes great in.
Top tip
How to avoid cheese oozing out in sandwich maker/ toaster ?
- Use cheese from freezer to avoid cheese oozing out (I use grated cheese)
- Avoid processed cheese slices to prevent this.
- Leave a little space along the edges, do not fill until edge.
- Go easy with filling. Over stuffing will make cheese ooze.
- Press around all along the edges to seal gently.
Variations
Add cooked sweet corn along. You can also make more variations by adding your favorite vegetables like mushroom, onion, tomato, hummus, etc.
I used white bread, choose your own favorite.

Spinach cheese sandwich
Ingredients
- 6 Bread slices
- 1 cup Spinach Finely chopped, tightly packed
- 2 Garlic
- 1 teaspoon Chilli flakes or crushed black pepper
- 2 tablespoon Sour cream or hung curd
- ½ cup Mozarella cheese or cheddar
- ¼ teaspoon Sugar
- 2 teaspoon Oil
- Salt
Instructions
- Wash spinach firstly and finely chop it. Finely chop garlic too.
- Since we wash and cut, there will be some water retained, but let it be there, it will help in cooking.
- Heat oil in a pan and add finely chopped garlic to it.
- Sautee for a minute and add spinach, salt, sugar.
- Cook until spinach reduces in volume and gets cooked. Take care not to over cook.
- Transfer to a bowl. Add sour cream, pepper powder to it. Mix well and keep aside.
- Mean while you can heat the sandwich maker with the griller plates.
- If you do not have sandwich maker, you can do this in stove top with tawa/ flat pan too.
- In a slice of bread, spread the prepared spinach mix and sprinkle some cheese in the middle.
- Grill for 2-3 minutes in a well greased sandwich maker, after the green light is on or follow the instructions from the manual of your sandwich maker.
- Just make sure to bring golden crisp lines over the sandwich.
Notes
- I have used grated mozzarella cheese, but you can use your own choice of cheese.
- Make sure to use less, otherwise it will ooze out as you grill.
- Grilling for longer time may also cause the cheese to ooze out. I prefer grated cheese over sliced cheese sheets for my grilled sandwiches.
- I also spread the cheese in the middle more.
- You can use some grated paneer or cottage cheese too along with cheese and reduce the cheese.
