    Sweet corn sundal recipe. Easy and tasty south Indian way of stir fried sweet corn makes a perfect snack for kids.

    Sundal is a perfect way to consume legumes, dal with south Indian flavors. Popular in Navaratri festival time for Golu, yet you can make it for snack/ snack box as well.

    A simple and easy sundal recipe that I learnt from my MIL. This is also one of the recipe clicked when I was at Chennai.

    My MIL’s special, she made it for snack and I just clicked it. I helped only in removing kernels from the cob. You can try this for evening snack too.

    It's so easy to make and healthy snack for the evening. Skip onions if you don't want to add onion for festivals like Navaratri.

    The best part is, no soaking!😀

    Pressure cook with water just to immerse and required salt for couple of whistles. Use in the recipe. You can also use frozen corn.

    Microwave method: Microwave corn without removing the husk (green skin) for 3-4 minutes in high. Turn once in between to ensure even cooking. Let it cool and remove the kernels.

    Sweet corn sundal recipe

    Sweet corn sundal recipe. Easy and tasty south Indian way of stir fried sweet corn makes a perfect snack for kids.

    Cook Time 20 minutes minutes
    Servings 4 people
    Cup measurements

    Ingredients

    • 1 Sweet corn cooked
    • 1 Onion Skip for Navaratri
    • 1 Carrot
    • ½ cup Grated coconut
    • Salt
    • 1 sprig Coriander leaves

    To temper

    • 2 teaspoon Oil
    • ½ teaspoon Mustard
    • 1 teaspoon urad dal
    • 2 Dry red chilli
    • 2 Asafoetida
    • 1 Curry leaves sprig
    Prevent your screen from going dark

    Instructions

    • Chop onions, carrots finely.
    • Heat a kadai/pan and temper with the items given under “To temper” table.
    • Add onion, fry till transparent and then add the carrot and fry for a minute.
    • Add the cooked corn kernels, required salt. Stir well.
    • Let it be in low flame for 2-3 minutes and stir in between. Lastly add the grated coconut and mix well for ½ minute.
    • You can garnish with coriander leaves and ¾ teaspoon of coconut oil for extra flavor!

    1. Chop onions, carrots finely. Heat a kadai/pan and temper with the items given under “To temper” table.

    Add onion, fry till transparent and then add the carrot and fry for a minute. In goes the cooked corn kernels, required salt. Stir well.

    2. Let it be in low flame for 2-3 minutes and stir in between. Lastly add the grated coconut and mix well for ½ minute.

    You can garnish with coriander leaves and ¾ teaspoon of coconut oil for extra flavor!

      I love this kind of a sundal as an evening snack. Now a days it's easy to remove the corn with the help of corn peelers.
