    Vadagam chutney recipe | Vengaya vadagam chutney

    Vadagam chutney is an easy chutney/ thuvaiyal that can be made under 5 minutes, goes well with pongal, kanji etc.

    Thalippu vadagam

    Thalippu vadam/ vengaya cadagam is something used for tempering instead of the regular ingredients.

    But it has all the ingredients in it. I know what you are thinking!

    First time when I heard about thalippu vadagam, I thought it is the regular fryums we deep fry for side dish.

    I was so excited about it and got disappointed when I ended up eating a slightly bitter black tempering.

    Could not understand the taste and flavor it adds to the dish in that age.

    How to make it? Here's a rough recipe I took from my MIL's sister who gave it:

    • Firstly wash & soak ½cup urad dal for an hour.
    • Drain water and grind coarsely by just running it in mixer 2-3 rounds.
    • Secondly, chop 1 kg small onion, 3 whole garlic and ½ cup curry leaves very finely.
    • Then mix chopped items with crushed urad dal, 3 tablespoon of each mustard, cumin and fenugreek seeds and 2 tablespoon of turmeric powder.
    • Dry this in sun for a day.
    • In the night, add 100 ml of castor oil and mix to the dried mixture.
    • Grease your hands with castor oil and make small balls out of it.
    • Dry again for a day. End of the day again tightly roll the balls with greased hands.
    • Dry in hot sun for 2-3 weeks and store in dry container.

    Use this instead of tempering items. Best for vathal kuzhambu, kootu and making chutney or thogayal.

    How I got this

    I first time got this thalippu vadagam from my MIL. I have tasted only may be once or twice in tempering form during my childhood and never liked it.

    Same with Vj, he too never like thalippu vadagam tempering. So both my mom and MIL never made this or use this.

    This is passed to my MIL from her sis, so my MIL asked me to take few. Though I did not want to, I took just 4 for making this thogaiyal as I have heard this will be really nice and easy to make too.

    And I realized that it’s true when I tried on my own. They say this is perfect for pongal. But Yet I have to try that. I tried it with vendhaya kanji as you must have seen in my last week’s post.

    I would say it was similar to vathal kuzhambu taste and flavour, as the ingredients are same.

    Steps

    Place everything in blender (break the vadagam roughly) and grind with very little water.

    Ingredients

    • 1 tablespoon Thalippu vadagam kari vadagam, small lemon size
    • ½ teaspoon Tamarind
    • 3 Red chilli
    • ½ teaspoon Jaggery
    • 2 tablespoon Coconut
    • Salt
    Prevent your screen from going dark

    Instructions

    • Place everything in blender (break the vadagam roughly) and grind with very little water.

    Notes

    • Make sure to balance salt, tamarind and chilli which is important. You can skip coconut too but recommend to add as it gives volume.

      No need to fry the vadams, just grind as such. This is thalippu vengaya vadagam different from the fryums kind of vadam. Hope you know this.

      I made this twice this week to go with ventaya kanji. Awesome combo. Also I used dry mango powder instead of tamarind. Tasted good. Thanks for the recipe
