    Veg pulao recipe with step by step pictures. Easy lunch recipe with mixed vegetables, perfect for lunch box and as one pot meal!

    I make this Veg pulao when ever I feel cooking something simple as one pot meal. This goes well with any rich gravy like butter paneer masala  or shahi paneer kind of side dishes. Aj loves this very much as well. Though he prefers Biryani more, he is fine with this simple vegetable pulao also.

    After trying few combination of ingredients, I am now hooked to this recipe. I have added thin coconut milk for this pulao, however you can make it plain too. This makes a great lunch box recipe. I know many of you make this, still wanted to blog this recipe here. Might be helpful to beginners in cooking.

    Few general tips for making pulaos:

    • Use good quality basmati rice. Experiment few and stick to one brand.
    • Soak atleast 10 mins for soft and moist instead of too dry results.
    • Add rice only after water starts boiling to avoid rice getting mushy.
    • If pressure cooking by giving whistles, use water from 1 & Β½ to 2 cups depending on the rice variety you use. Test which works best for you.
    • I usually do all pulao by slow cooking. After rice gets ΒΎth done, I put the flame to lowest and cook for 12-14 mins.
    • Add required salt in water itself. If you add and mix after pulao gets cooked, rice breaks.
    • Fluff pulao gently once after rice is done, do not over mix to avoid broken rice.

    Ingredients

    • 1 cup Basmati rice
    • 1 cup Mixed vegetables carrot, peas, beans, cauliflower -Chopped
    • 1 Onion
    • 3 Green chilli
    • 1 & Β½ cup Coconut milk or plain water
    • Salt - As needed
    • 1 teaspoon Ghee

    To grind

    • 4 Garlic
    • 1 inch Ginger piece
    • 1 Cinnamon

    To temper

    • 1 tablespoon Oil
    • 2 Cardamom
    • 1 Cloves
    • 1 Biryani leaf
    Prevent your screen from going dark

    Instructions

    • Soak basmati rice for atleast 10 mins.
    • Slice onion, green chillies. I used 1 small carrot, 8 beans, frozen peas and corn.
    • Peel and grind ginger, garlic, cinnamon with little water to fine paste.
    • Heat a small pressure cooker, add oil and temper with the items given under to temper table.
    • Add onion, green chilli and fry till transparent in medium flame. Add ground ginger garlic paste.
    • Give it a stir for a minute and add the vegetables.
    • Fry in medium flame for 2 mins.
    • Add the rice, drained from water. Mix well.
    • Add salt, coconut milk (or water) and bring to boil.
    • Close the pressure cooker and keep the flame in lowest flame possible and cook for 12 – 14 mins.
    • Or you can also keep for 2 whistles in medium flame also. Open and fluff the pulao carefully and mix ghee.

    Notes

    • Soaking rice gives soft rice and needs less water to get cooked, hence we get separate grains.
    • Fry in medium flame to avoid browning of any ingredient which will make pulav look dull in colour.

    We had it with butter paneer masala. So perfect with veg pulao.

      I love this recipe. It's one of my favourites, and gets a lot of veg into hungry little bellies in one go. Although I do tend to use whole bay leaves and cinnamon and fish them out later. Will try your way

      I am a big fan of ur cooking! Every time I try any dish from ur post that has basmati rice... The rice comes out soggy Instead being separate like u have.. I have reduced the water as well..any suggestions...
