Vegetable puff recipe, Indian style veg puffs

Vegetable puff, veg puffs as we call it when we buy from bakery. With store bought ready made puff pastry sheets. Step by step photos.

Vegetable puff or veg puff is a nostalgia for me. I would have hardly had less than 10 times but just love it. It is a bakery stuff and never in my life thought I would attempt at home. Mostly, served as a part of tea party, office functions. For us, since masala powders are not used that much at home, this will be just a burst of flavors.

Main flavor in the stuffing will be ginger garlic paste, garam masala powder that lingers in your hand even after finish eating.

Today I tried this vegetable puff from store bought frozen butter puff pastry sheets. It came out nice, was a perfect tea time snack for my kid. He enjoyed this and wanted frequently😮. No wonder, my genes clearly passed on to my kid too, hehe.

Here’s how I made vegetable puff:

I used readymade puff pastry sheets, so the job is just to make the vegetable stuffing. I tempered with cumin seeds, sautee onion & ginger garlic paste. Added some cooked mix vegetables and tomato. Added spice powders and salt and garnished with coriander leaves.

Variations:

Experiment with your choice of stuffing inside. You can try paneer or potato too. Also, the spice powders play an important role. I, at times add sambar powder (use Asian curry powder if you are new to sambar powder). Or use a combination of red chilli powder, coriander powder and a 1/4 tsp of cumin powder.

Ingredients

  • 1 Ready-made puff pastry sheet
  • 1 cup Mixed veggies chopped
  • 1 Onion
  • 1 Tomato chopped, deseeded
  • 1 tsp Ginger garlic paste optional
  • 1 tsp Cumin seeds
  • 1 tsp Red chilli powder/sambar powder – 1 tsp
  • 1/2 tsp Garam masala powder – 1/2 tsp
  • 1/8 tsp Turmeric powder – 1/8 tsp
  • 2 tsp Oil
  • Salt – as needed
  • 3 tbsp Coriander leaves chopped

Instructions

  • Firstly, thaw and prepare the pastry sheets as per the instructions given in the package.
  • In small cooker, Pressure cook the veggies for 2 whistles with water just sprinkled over the veggies. Quick release the pressure to retain the colour.
  • Heat a pan with oil and splutter cumin seeds.
  • Add onions and fry for a minute. In goes ginger garlic paste and fry for 30 secs.
  • Add the boiled veggies and chopped de seeded tomatoes. Tip in all the spice powders given in the table.
  • Mix well and fry in low flame till all the masala blends well in the veggies.
  • Lastly add the salt and mix well. Switch off the flame and cool down.
  • Pre heat the oven in 220 Deg C.
  • Line a baking tray with baking sheet. Grease it with oil to prepare for baking.
  • Cut into pastry sheets to rectangles as shown in the picture. Arrange those in the baking sheet.
  • Keep 2 tbsp of filling in one side of the rectangle and fold to cover the stuffing.
  • Brush the puffs with oil or ghee. Bake for 15-20 mins, until golden brown in colour.
  • Brush again with oil or ghee if desired.

Notes

  • Please note that some pastry sheets are thick that we need to dust and roll out. Some comes as such – just cut and use. So follow accordingly as per the type of pastry sheet.
  • Some people confuse puff pastry sheets and spring roll pastry sheets. Both are different. Puff pastry gives layers as we need. While spring roll pastry sheets are single sheets as we need for the wrap.

Vegetable puff step by step:

  10. Cut into pastry sheets to rectangles as shown in the picture. Arrange those in the baking sheet.
  11. Keep 2 tbsp of filling in one side of the rectangle and fold to cover the stuffing.

  12. Brush the puff with oil or ghee. Bake for 15 – 20 mins, until golden brown in color.

Serve hot with tomato sauce/ ketchup/ chilli sauce. Note: (Final pictures updated later)

    Shifa I got it in fair price only, you should see again in the frozen section where they keep frozen peas,pizza base etc…. There are two brands,one is sunshine and the other is what i got,not sure about the brand name….

    I too have the same, you have to bake in convection mode, first preheat to 220 until it beeps, then bake at the same temperature for the told time.

    I tried the vegetable puffs today.. It came out very well..

    But wanted to check with you regarding the puff pastry sheet.. I got the Pampas brand, which is more like a block and you need to roll out the individual sheets..

    May I please check which brand of the pastry sheets you had used ? and was it a block or do you have individual sheets which you can use as it is?

    If it is a block, can you pls post pics of how to roll it out evenly into these rectangular shapes..

    Tried this out and the taste was good but didnt achieve the crispness and colour as ur pic.. I had to turn the puff midway to make the top layer golden brown but still didnt get the sides in the same colour..
    What might b the reason

    Usually, in all baking recipes, the pre heat and baking temperature are same. So in this case it's 220 deg C 🙂

    Thawing means, keeping out in room temperature until it comes to maangeable texture. Usually thawing time will be mentioned in the pack itself.

    Make sure the pastry is stored in good conditions. Usually readymade pastry sheets gives layers without any special treatments. Hope you preheat the oven. Refer the package too for any specific way mentioned in it. Hope this helps

    Yes you can, may be you can reheat again by preheating the oven at 190 and leave the puffs inside for 4-5 minutes.

    Hi raks, can i try the same in airfryer. If so How many minutes should i keep it..

      Hi Divya, sure you can try puffs in air fryer. 10 mins at 200 deg C in a preheated air fryer. Hope this helps
