Baby corn sabzi
Baby corn sabzi with tomato, capsicum, onion. Simple and easy recipe to go well with dal chawal or other lunch menu. Stepwise photos.
- 12 Baby corn
- 1 Onion chopped
- 2 Tomato chopped
- 1/2 Capsicum cubed
- 2 Green chilli slit
- 3/4 tsp Red chilli powder
- 1/2 tsp Coriander powder
- 1/8 tsp Turmeric
- 2 tbsp Coriander leaves
- Salt & water - As needed
- 1 tbsp Oil
- 1 tsp Cumin seeds
Cut the baby corn to your desired shape and boil it with salt and turmeric until done.
Heat a pan with oil and temper with the jeera. Add onion and green chillies and fry till transparent.
Add the cooked baby corn and red chilli powder and cook for 2-3 minutes.
Add the tomato and capsicum and fry for 2-3 more minutes in medium flame.
Top with coriander leaves and drizzle with some oil to give it a glaze. Switch off the flame.
- You can add finely chopped ginger or ginger garlic paste along with onion if you like.
- You can also pressure cook baby corn instead boiling. 1 whistle in small pressure cooker, with little water and salt.
