Baby corn sabzi

Baby corn sabzi with tomato, capsicum, onion. Simple and easy recipe to go well with dal chawal or other lunch menu. Stepwise photos.

  • 12 Baby corn
  • 1 Onion chopped
  • 2 Tomato chopped
  • 1/2 Capsicum cubed
  • 2 Green chilli slit
  • 3/4 tsp Red chilli powder
  • 1/2 tsp Coriander powder
  • 1/8 tsp Turmeric
  • 2 tbsp Coriander leaves
  • Salt & water - As needed

To temper

  • 1 tbsp Oil
  • 1 tsp Cumin seeds


  • Cut the baby corn to your desired shape and boil it with salt and turmeric until done.
  • Heat a pan with oil and temper with the jeera. Add onion and green chillies and fry till transparent.
  • Add the cooked baby corn and red chilli powder and cook for 2-3 minutes.
  • Add the tomato and capsicum and fry for 2-3  more minutes in medium flame.
  • Top with coriander leaves and drizzle with some oil to give it a glaze. Switch off the flame.


  • You can add finely chopped ginger or ginger garlic paste along with onion if you like.
  • You can also pressure cook baby corn instead boiling. 1 whistle in small pressure cooker, with little water and salt.
