Avocado grilled cheese recipe

Avocado grilled cheese with smooth, creamy avocado mash along with cheese in between perfectly golden toasted bread.

Ingredients

  • 2 Avocado
  • 10 Bread slices
  • 10 Cheese slices
  • ¼ cup Coriander leaves
  • 1 Green chilli
  • ½ Lime
  • Butter as needed
  • Salt little

Instructions

  • Run knife around the seed and twist open avocado firstly. Take out the seed.
  • Scoop the pulp and chop it roughly. Then place in a mixer/ food processor.
  • Add coriander leaves, green chilli, lime juice, little salt on top of it.
  • Blend smoothly.
  • Take bread slices. Place cheese slice over it and spread the ground avocado.
  • Furthermore, place another cheese slice on top of it.
  • Cover it with a bread slice on top.
  • Heat a cast iron pan preferably and grease with butter (1 tsp)
  • Place the avocado sandwich over it.
  • Cook in low to medium flame covered.
  • Once golden, flip and press gently for even browning. I added another teaspoon of butter as it helps even golden browning and crispiness.
  • Finally take out when both sides are crispy and golden.
  • Cut into two to serve. Use a serrated knife and slice gently without making the stuffing ooze out.

Notes

  • Use rustic bread slices if you want crispier results even after cooling down.
  • Gourmet cheese slices works well though you can make it with regular cheese slices.
