Run knife around the seed and twist open avocado firstly. Take out the seed.
Scoop the pulp and chop it roughly. Then place in a mixer/ food processor.
Add coriander leaves, green chilli, lime juice, little salt on top of it.
Take bread slices. Place cheese slice over it and spread the ground avocado.
Furthermore, place another cheese slice on top of it.
Cover it with a bread slice on top.
Heat a cast iron pan preferably and grease with butter (1 tsp)
Place the avocado sandwich over it.
Cook in low to medium flame covered.
Once golden, flip and press gently for even browning. I added another teaspoon of butter as it helps even golden browning and crispiness.
Finally take out when both sides are crispy and golden.
Cut into two to serve. Use a serrated knife and slice gently without making the stuffing ooze out.
