How to make vegetable masala stuffing
Heat a pan with oil and temper with cumin seeds.
Add finely chopped onion and saute till translucent.
Then add ginger garlic paste and give it a fry.
Followed by finely chopped tomato, all spices powders and salt.
Continue cooking for 3-4 minutes in medium flame until it turns mushy.
Add the vegetables, ¼ cup water and cook covered for 5-6 minutes.
Let the vegetable retain crunchiness.
Once the vegetables are done and water content reduces, continue cooking until the masala turns shiny. (oil oozes out)Finally garnish with coriander leaves.

Prepare idli dosa batter as needed.
Heat a tawa and spread thin dosa over medium heat.
Drizzle oil or ghee generously. Smear the dosa with dosa spatula to ensure even cooking.
Put the flame to low to ensure crisp, golden dosa base.
Place 3-4 tablespoons of prepared masala over center of the dosa.
Fold from three sides to close the dosa as shown below. Serve immediately.
