Special vegetable masala dosa

Special vegetable masala dosa is inspired from Hot chips restaurant menu that I tasted. A spicy and flavorful stuffing for special treat.

  • Idli dosa batter as needed
  • 10 cauliflower florets
  • 1 cup cabbage
  • 1 carrot small
  • 4 Beans
  • 1 Capsicum tiny
  • 1 Onion
  • 2 Tomato large
  • 1 teaspoon Ginger garlic paste
  • 1 teaspoon Red chilli powder
  • 2 teaspoon Coriander powder
  • ½ teaspoon Garam masala or Kitchen king masala
  • teaspoon Turmeric
  • 2 - 3 tablespoon Coriander leaves for garnish
  • Salt as needed
  • 2 tablespoon Oil


  • How to make vegetable masala stuffing
  • Heat a pan with oil and temper with cumin seeds.
  • Add finely chopped onion and saute till translucent.
  • Then add ginger garlic paste and give it a fry.
  • Followed by finely chopped tomato, all spices powders and salt.
  • Continue cooking for 3-4 minutes in medium flame until it turns mushy.
  • Add the vegetables, ¼ cup water and cook covered for 5-6 minutes.
  • Let the vegetable retain crunchiness.
  • Once the vegetables are done and water content reduces, continue cooking until the masala turns shiny. (oil oozes out)Finally garnish with coriander leaves.

  • Prepare idli dosa batter as needed.
  • Heat a tawa and spread thin dosa over medium heat.
  • Drizzle oil or ghee generously. Smear the dosa with dosa spatula to ensure even cooking.
  • Put the flame to low to ensure crisp, golden dosa base.
  • Place 3-4 tablespoons of prepared masala over center of the dosa.
  • Fold from three sides to close the dosa as shown below. Serve immediately.


  • You can make stuffing with your own choice of vegetables. Even add some mashed potatoes.
  • Instead of cumin, you can use cinnamon, fennel for more strong flavor.
